People always ask me for yummy veggie recipes. Most people *think* they don’t like veggies simply because they haven’t tasted veggies that are prepared properly. Plain broccoli anyone? I don’t think so! I love all of my veggie based meals because they are filling and DELICIOUS!! This recipe is one of my absolute favorites and I know it will become one of yours too.
I wanted to make a ratatouille but I didn’t have all the proper ingredients (like eggplant or parsley but decided to use what I had on hand and make it work. That’s the great thing about cooking, you get inspiration from your favorite dishes and then just use what you’ve got to make something truly unique!
- 1 small yellow onion, diced
- 4 cloves garlic, minced (I always use a garlic press, makes things SO much easier!)
- 1 green bell pepper, diced
- 1 red bell peppers, diced
- 1 cup diced zucchini squash
- 2 zucchini, sliced into disks
- 2 yellow squash, sliced into disks
- 4 large carrots, sliced into disks
- 3 large tomatoes, chopped
- 1 tablespoon sliced fresh basil leaves
- 1/2 teaspoon fresh thyme leaves
- sea salt and fresh ground black pepper
- 1/4 cup olive oil
In a large saute pan over medium heat, add olive oil. Once hot, add onions, garlic and a dash of sea salt. Cook, stirring occasionally, until wilted and slightly caramelized, about 5 to 7 minutes. Add the green and red peppers, zucchini, carrots and squash and cook for another 5-7 minutes until slightly soft. Add the tomatoes, basil, thyme, and salt and pepper, to taste, and cook for a final 5 minutes, stirring occasionally.
That’s it! Easy peasy!
Serve hot with a sprinkle of shredded goat cheese, over quinoa or spelt pasta, or as a delicious side dish. I usually make a huge batch so I have extras to use during the week. That’s one of my key components to weight loss – always have healthy, veggie based meals on hand. If you do that, the rest is easy!
