Simple Vanilla Macaroons

 

I love me some macaroons. Love, LOVE them!! Hail Mary makes some AMAZING Vanilla Macaroons that I wanted to try to recreate on my own.  Just a warning, these are addictive…majorly, majorly addictive!!

You’ll need:

  • 3.5 cups dry, shredded coconut (1 cup will be used as is, the other 2.5 cups will be made into coconut butter)
  • 1 cup almond flour
  • 2 Tbs honey – more or less as desired
  • 1 squirt Vanilla Stevia (I always order my mine through iherb.com, you can use my discount code WAG472 to get $5 off your first order)
  • dash of sea salt

First put 2.5 cups shredded coconut  into a high speed blender and blend into a paste/butter. I used a VitaMix (a.k.a. best blender on the planet!).

 

 

Next, add your coconut butter mixture with all the other ingredients  in a large bowl until you’ve created a large sticky “ball”.  Be sure to taste as you go to make sure you have the desired sweetness.

 

 

Using the palm of your hands, roll the mixture into small balls and place onto a baking sheet. I always use a SilPat to make sure I get a nice crispy outer layer. I got my silpat at Bed, Bath & Beyond.

Cook on the middle rack of the oven at 350 degrees for about 5-10mins. Just keep checking to make sure your macaroons don’t get too brown (like I did – apologies for the terrible photograph at the beginning of this post!!) the cooking time will vary based on the size of your macaroons.

These are very easy to make. Excellent with some dark chocolate and tea, or even better, Fall in a Glass, talk about yummmm!! I hope you Enjoy!! These are pretty amazing!!

    Thanks for sharing this recipe! I’m puertorican, we call these ‘Besitos de Coco’, which translates literally to Coconut Kisses. They were my favorite dessert when I was a kid. Now I don’t eat them so much because of all the sugar and additives. I like how this recipe is so simple and uses very little sugar. But, I must be missing something because, how did they get the texture shown in the first picture if they go into the oven as perfectly round balls? Should I roll them in some coconut flakes after forming the ball? Thanks in advance!

      Yes, you can roll them in coconut flakes after forming the ball. If you notice, that picture of the final product is a borrowed photo! I left mine in the oven a little too long and they ended up getting brown. They are still really, really delicious but not very visually appealing! The other photos are all mine. just not the top one!

      I love the name “Coconut Kisses” so cute! I also checked out your blog and I LOVE it! Your pictures are wonderful!! Hard to believe you are just using a point and shoot! I will definitely be making the wood table top you have in your tutorial. Thank you!! and please stay in touch!!
