Mango Lassi

We reached a high of 85 degrees here in Austin today. I’m not gonna lie, I did go lay by the pool for about an hour…I HAD to!! It was just too gorgeous to stay inside! On days like this all I can think about is summer and how much I’m looking forward to it!

After the pool I wanted something to match the tropical summery mood I was in and this smoothie hit the spot!! Super easy to make and SO delicious!

Mango Lassi

You’ll need:

  • 1 banana
  • 2 cups fresh or frozen mango – I used frozen to get a nice, creamy texture
  • 1 cup fresh or frozen coconut meat or you could use 1 heaping Tbs of Coconut Powder. I love that stuff!
  • 1 cup Almond Milk or Almond Milk Kefir – I used Almond Milk Kefir because I it makes me feel AWESOME and has totally revamped my digestion and skin!!
  • 1-2 dropperfuls Vanilla Stevia to taste

Simply blend all ingredients in a high speed blender until smooth. Et Voila! Your delicious smoothie is ready to enjoy!
