Mango Lassi

We reached a high of 85 degrees here in Austin today. I’m not gonna lie, I did go lay by the pool for about an hour…I HAD to!! It was just too gorgeous to stay inside! On days like this all I can think about is summer and how much I’m looking forward to it!

After the pool I wanted something to match the tropical summery mood I was in and this smoothie hit the spot!! Super easy to make and SO delicious!

Mango Lassi

You’ll need:

  • 1 banana
  • 2 cups fresh or frozen mango – I used frozen to get a nice, creamy texture
  • 1 cup fresh or frozen coconut meat or you could use 1 heaping Tbs of Coconut Powder. I love that stuff!
  • 1 cup Almond Milk or Almond Milk Kefir – I used Almond Milk Kefir because I it makes me feel AWESOME and has totally revamped my digestion and skin!!
  • 1-2 dropperfuls Vanilla Stevia to taste

Simply blend all ingredients in a high speed blender until smooth. Et Voila! Your delicious smoothie is ready to enjoy!

    We had 70 and sunny today in Minnesota. Spent the half the day at the zoo and the other half hiking some trails with my three boys. Blessed <3

    OOOHHH! This looks so good! I love warm weather too and love getting outside when I can to soak up the warmth and Vit. D. I just makes you happy, right? Going to try this one without the mango since I am doing a candida cleanse. I am LOVING the almond milk kefir – it really does make you feel wonderful. I have a constant batch going on counter – I drink and use in smoothies – doesn’t last long. It makes a difference. I hope everyone tries it – it is so easy to make, delicious, and good for you.     1 cup almond kefir ( love it )
    1 banana
    1/2 cup frozen mango
    zest and juice from 1/2 lemon
    vanilla stevia to taste
    tastes like lemon cupcake 🙂
