Kale Salad with Butternut Squash
I’ve been on a kale salad kick lately but I just can’t get enough!! They are SO good!!! This kale salad was inspired by the lovely Sarah over at My New Roots. She is one of my favorite bloggers and a constant source of inspiration!
- 1 buttnernut squash
- 1 head of curly kale
- 1 shallot
- 2 Tbs dried cranberries
- 1/2 cup of my lemon vinaigrette dressing
- couple tsps olive oil
- sea salt
- fresh cracked black pepper
- 2 tsps poppy seeds
First, peel your squash and cut it into cubes. Toss with a little olive oil, little sea salt and poppy seeds. Place on a large baking sheet covered with parchment paper and bake until tender, about 30-40 mins
Next, slice your shallots into thin strips and pour vinaigrette over them to let marinate.
Then, grab your kale by the stem and strip the leaves from the stem with your hands. I like to save the stems and use them later in my veggie juices! Again, using your hands, tear the kale into small pieces and place in a large bowl. Then pour lemon vinaigrette over your kale leaves and use your hands to squeeze, massage and mix the kale and vinaigrette. Continue until the dressing is mixed in thoroughly and the kale has reduced in volume by about half. Massaging the kale is not only fun but also helps to make the tough leafy greens easier to digest. Taste the mixture and adjust flavors or add salt and pepper as as needed.
When the squash is done cooking, add it to the kale mixture along with cranberry seeds and toss. Top with fresh cracked pepper if desired.
