Coming Full Circle

Hey party people, Happy New Year!!!! I hope you are all ready to kick off 2012 in the BEST possible way! I spent the  first day of this year being quiet, reflecting, getting organized, and setting goals for the new year. I am super pumped for 2012! I’ve got some very exciting projects coming up that I simply can not wait to share with you in the near future!

The theme I’ve been feeling for this year is “CHANGE”. Change gone come…and not in the “it’s the end of the world” kind of way but it a subtler way. An “out with the old toxic crap and in with the positive, uplifting, inspiring things” kinda way. I don’t know about you, but I am SO over the negativity, FEAR and stifling energy that has been so present in our world over the last few years.  Dr. Christiane Northrup said it best:

“I am so excited to be in 2012. I’m calling 2010 and 2011 the Years of the Great Colonic. I don’t know about you, but I found [the last two years] very challenging on many levels. But now we’re HERE. And I, for one, wish for ALL of us, the ability to simply BE OURSELVES.”

Yes, BE YOURSELF. Don’t worry about what other people say or think. You are unique, you are beautiful, you have a bright light deep within, all you have to do is LET. IT. SHINE.

“I truly believe that nourishing yourself with fresh living foods is one of the greatest forms of self care. In 2012 I want to inspire people to take the time to really feed themselves and their families the best food ever. This should be a priority! Food is so much more than just food, it’s an expression of love and a mirror of how willing we are to care for ourselves on the deepest level. You deserve a gorgeous meal that’s colorful, nutritious, and delicious!! Your body is your temple! BE GOOD TO YOURSELF, take the time and be willing to see your inner light and know that you deserve only THE BEST; that’s what I want for 2012 🙂

You see, it’s all connected. Food, emotions, diet, self worth, love, energy, contentment…it’s all a reflection of ONE THING. Let me give you an example. Like many of us, I went off my regular eating over the holidays, like WAAAY off.  So far off, that for the first time in over 7 years I went back to feeling like my former “sick” self again. Let me explain; before I cleaned up my diet, I thought it was normal to constantly feel tired, have trouble concentrating, allergies, acne, gas, bloating, cold/flu, depression, anxiety, and an overall negative outlook on life. I had always felt that way so how could I know any different? Once I changed my diet it was like a whole new world opened up.  I had energy, I could concentrate ALL DAY, I felt alive and happy and connected to something bigger than me. I witnessed for myself how diet and nutrition can TOTALLY TRANSFORM your life. Just like that, I was “saved”!

Recently, after 7 years of clean eating I hit an emotional road block. I won’t go into the details but it provided me with an opportunity to experience (on an even deeper level) how food actually can make us physically and emotionally sick. At my worst point, I slipped back into a depression and not just a case of  the blues, but a flash back to the old days in college where I couldn’t even get out of bed. I was gassy again, moody, TIRED – so so tired, I couldn’t concentrate and overall I felt pretty miserable and sorry for myself.  Then I got sick. Sick?! I never get sick!! It happened twice in one month. At the time I couldn’t figure it out. What was wrong with me?

Somehow I stumbled upon some of David Wolfe’s videos on GaiamTV and then found Dara Dubinet who I just absolutely adore! Her energy and vivaciousness is contagious! Be sure to tune into her YouTube Channel for some amazing videos and inspiration. These videos reminded me of how I used to be and how far I’d strayed. Due to stress, relationships, and all of life’s other challenges I had managed to stray from the path that once saved me from the pain I felt in my everyday life. It’s only been a few days that I’ve been back in FULL FORCE. Juicing, salads, veggies, sleep, dead sea salt baths, colonics etc. I can already feel the shift. The haze is starting to clear. That’s the power of REAL, living food! That’s also how I can always tell if my clients are following their program, because no matter what, after just a few days they should be feeling goooood!

I want you (my amazing, fabulous readers!!) to know that I will always be 100% transparent on this blog. I’m going to share my real experiences with you in hopes that by doing so, you can find inspiration, information and support to make changes in your own life.

This year we’re going for it! No holding back! If you messed up in 2011 don’t beat yourself up about it. It’s time to forgive yourself, get over it, and move on! Even someone like me, that’s been on this path for almost a decade, can slip up. There’s always a lesson to be learned. For me, it instilled an even greater respect for food, for my body, my health and an even greater passion and urgency to help others understand food and how it effects our physical and emotional health. So you see, it is all connected. Food and our emotions have a very delicate and intricate relationship with one another. As David Wolfe says, “Food is a reflection of self esteem.” We need good quality food to feel good, simple as that.

Speaking of good food that makes you feel good, how about a fabulously simple roasted root vegetable dish that is both hearty and healthy?! Yes Please!

Healthy Roasted Vegetables

You’ll need:

  • 1 sweet potato, peeled and cut into cubes
  • 1 large beet cut into cubes
  • 2 turnips cut into cubes
  • 2 large carrots, peeled and cut into cubes
  • 2 small purple potatoes
  • 1/2 a red onion cut into thick slices (or you can substitute with onion powder)
  • 5 cloves of garlic with skins removed (or you can substitute with garlic powder)
  • dried Italian spices
  • drizzle of olive oil or coconut oil
  • sea salt
  • fresh cracked pepper

Preheat oven to 400 degrees.

In a plastic bag (I use left over produce bags) place cubed vegetables and drizzle with a small amount of olive/coconut oil, just enough to lightly coat your veggies. You can always add more oil if the vegetables seem dry.

Next add the dried herbs, salt and pepper. Toss well, evenly coating all the vegetables with the seasonings and oil.

Spread the vegetables evenly on a large baking sheet. Place on middle rack in oven and bake for 35 to 40 minutes.

You can actually use any assortment of vegetables you like; cauliflower, broccoli, red potatoes, eggplant, acorn or butternut squash, brussel sprouts, parsnips, green beans, you name it!

I had mine with a very simple salad and it was the perfect lunch meal.
