The Great Spinach Swap
You’ve all probably heard of spinach pasta but have you ever tried actually using spinach as a pasta substitute? You’d be surprised at how delicious and filling it is!! I first heard about the spinach swap from my mentor, Natalia Rose and just found out that Lauren Conrad is also a big fan. It’s a great way to cut back on carbs and get ready for swim suit season. It’s just as tasty and filling as the real thing, sans the bloat and carb-coma!
The other big plus? It takes 5 mins to make! Healthy, delicious, and fast, now that’s my kind of meal!
Add about 1/2 cup water and a dash of sea salt to a medium sized pot. Bring water to a boil and then add spinach. Cover with lid and let steam until wilted.
Drain your spinach well. I sometimes use a large, flat wooden spoon to press the wilted spinach against the side of the pot to remove any excess liquid.
Place the spinach on the bottom of the plate and top with a good quality marinara. My favorite lately is Cucina Antica Tomato Basil. It’s very low fat but full of flavor! Then I’ll top everything off with a bit of goat cheese or keep it totally vegan by using the Brazil Nut Parmesan from this recipe.
What an easy way to get a TON of minerals and nutrition!! I used almost an entire large container for this recipe!

Usually we crave the sauces and spices from out favorite cuisine so use those sauces to dress up your veggie-only meals. I do the same thing with steamed zucchini and Tiki Masala Sauce all the time!
