Recipe Round Up

I’ve been getting LOADS of inspiration from Pinterest lately and wanted to share my favorites with you. If you ever need recipe inspiration, Pinterest is a fabulous place as is Health Freak Food, Taste Spotting, and Feastie. Here’s a look at my top 6 healthy and inspiring recipes this week:

1. These Zucchini Fritters from Cook Your Dream look INCREDIBLE!!! I definitely want to try making these soon. They seem very similar to my Zucchini Balls which means they are probably amazing!

2. I have a love affair going on with salmon right now and this Salmon with Mango Avocado Salsa looks divine. A true summer dish; gorgeous, light and fresh! How good does that salsa look?! Can’t wait to try this!

3. This Vegetable Tian from Deliciously Organic caught my eye immediately. It would be a perfect veggie dish for entertaining. Gorgeous, yummy, and healthy!

4. Fish Provencal is the perfect fast and healthy meal. Takes just minutes to make but is sure to fill you up and taste amazing!

5. I’m pretty sure this picture speaks for itself. Makes me want to grab a knife and fork and go to town on that grilled veggie stack!! Grilled veggies keep really well in the fridge. You could grill your veggies and make the hummus ahead of time then have the leftovers all week long either on their own, over salads, or with a couple slices of toasted Ezekiel bread to make a delicious veggie sandwich!

6. I first heard about Cauliflower Steaks from Martha Stewart. This recipe from the Proud Italian Cook makes my mouth water! I love using cauliflower as a veggie replacement for starches and carbs.

I hope these recipes inspire you to try something NEW!! You’ll never know if you like something until you try it…and who knows, you might end up finding some new favorites while you’re at it!!
