What I’m Loving Lately
The temps are dropping and Fall is definately in the air. My food preferences always shift with the cooler weather so here’s a look at the dishes I’m loving right now.
Apple Cider Tea is pretty much a staple. I have it when I wake up and love it as a night cap before bed. It tastes just like real mulled apple cider and gets me in holiday mode!
I’m also loving me some Chocolate Pumpkin Spice smoothies. They are just sooooo good. I usually have them mid morning after my tea. In the cooler months I tend to make my smoothies first then let them sit on the counter while I’m getting ready. I’ll sip on my tea and let my body temp warm up a bit and then go for my smoothie a little later in the morning. This way my smoothie isn’t SO cold and I’m warmed up from my hot tea. Sometimes I’ll add a pear or some cherries to this recipe just to mix things up a bit. Both variations taste great!
For lunch I am OBSESSED with Sweet Potatoes and Goat Cheese, I just can’t get enough!! Sweet Potatoes are so easy to make, there are no cooking skills needed! They’re also super filling and delicious. There is something magical about the sweet potato/goat cheese combo. If you haven’t tried this yet I suggest you do so immediately!! The way your house smells after baking a sweet potato is reason enough to try this recipe!
I also am really enjoying warm soups for lunch or dinner. I love me some Stewp, it is so easy to make and never gets old because you can constantly change up the ingredients based on what’s in season. If you’re a student or anyone on a budget, this is a great way to get your veggies in and still keep costs down.
