I’ve noticed a trend around town lately. Several of my favorite restaurants are serving Asian Slaw instead of regular coleslaw and I’m kind of obsessed!! Regular coleslaw is typically loaded with mayonnaise and sour cream; not the healthiest ingredients. This version is full of flavor and healthy too! It’s gluten-free, dairy-free, and low carb. It’s also really easy to make. A huge plus for this busy girl!

You’ll need:

  • 8 cups of shredded red and/or green cabbage (you can also find pre-shredded slaw mixes in the produce section at your local Whole Foods, Central Market or health food store)
  • 10 ounce bag of shredded carrots
  • 1 red bell pepper cut into thin strips
  • spicy peanut dressing
  • cilantro and a wedge of lime as garnish (optional)

In a large mixing bowl, simply combine your veggies with the spicy peanut dressing. Garnish with torn cilantro and a wedge of lime. Serve as a yummy side dish, mid-day snack, or as an entire meal!

You’ll likely have extra spicy peanut dressing leftover which can be used as an awesome veggie dip or as a creamy salad dressing. Kids love it, boyfriends crave it, picky eaters can’t get enough of it!! Try it and leave a comment telling me what you think!
