My version of Green Eggs


As you know, I’m all about eggs. Not just any eggs – they must be amazing eggs. I’m talkin’ farm fresh, free range, happy eggs! They are such a wonderful source of lean protein and you can use them to whip up a meal in minuets!

These particular eggs are from Boggy Creek Farm. They have the BEST eggs.  They are suuuuuper fresh and you get to meet the chickens while you’re there!



I really LOVE broccoli in my eggs. I know what you’re thinking, “Broccoli?! With eggs?!” but I’m telling ya, you’ve got to try it. It’s so good!

You’ll need:

  • 3 organic free-range eggs
  • 1 small head of broccoli. chopped fine – you can also include the top half of the stem, it’s my favorite part and adds a nice crunch!
  • 1 large handful of baby spinach
  • 2 cloves of garlic, chopped fine
  • 2 green onions. chopped fine
  • organic butter
  • sea salt & cracked pepper to taste
  • Cotija cheese to sprinkle on top

In a medium size skillet over medium high heat melt a small pat of butter. Add garlic and green onions. Then add chopped broccoli including the top half of the broccoli stem and sea salt to taste.  Cover and let cook for 1-2 mins or until soft.



Next, add baby spinach and beaten eggs. Stir the eggs and veggies around gently in the pan until fully cooked. Top with fresh cracked pepper and cotija cheese. If you haven’t used cotija cheese, you simply must try it immediately!! It is a hard, salty cheese that is traditionally used in Mexican dishes. I love it on all kinds of cooked veggies and salads. A little bit goes a long way!

    I LOVE eggs and spinach..I haven’t tried broccoli yet, but after seeing this recipe, I definitely will next time..thanks for great inspiration!

    Oh yeah!! love this type of breakfast!! SO yummy!! i love adding the broccoli stem to everything, too! it’s amazing how it actually tastes a little sweet. I actually peel the entire outside of the stem (because it’s hard to digest) and then chop up the stem…i love that added crunch, too!! thanks for sharing!! gonna go make the this soon!! :):)

    This would be yummy for breakfast. Looks like enough for a week’s worth of breakfast. Do you think it will last in the fridge that long?

    That sounds so yummy! Will definitely try this recipe this weekend. But, could you suggest a dairy free alternative to the cheese. I looked it up and saw that it is made from cows milk.
