Grilled Cheese & Tomato Soup


There’s something about grilled cheese and tomato soup. It’s comforting, delicious, and feeds the soul. After making my Roasted Tomato Bisque yesterday I just knew I had to make a grilled cheese to serve with it. The typical American grilled cheese is made with yellow artificial cheese, white bread, and LOADS of butter. This version is just as good but so much healthier!

You’ll need:

Preheat a skillet over medium heat. Lightly butter one side of a slice of Ezekiel bread. Place bread butter-side-down onto your skillet and add 1 slice of cheese. Butter a second slice of Ezekiel bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat as desired with 2 more slices of bread, butter and slice of cheese.

Kids will absolutely LOVE this recipe and you will too! Serve with piping hot Roasted Tomato Bisque and a simple side salad, delish!!

    You know! – Scott and I were just talking the other day about grilled cheese sandwiches and alternative/ healthier ways. I suggested Food for Life Millet bread with goat cheese/coconut oil, but organic butter is fabulous! Must find some! Our “foodie senses” were on the same radar, Linda! Thanks for this, really! Will try it this weekend!

      no specific brand Lizeth. I do love using goat butter though! It has a really lovely flavor!

    I love making mine with raw goat cheese and Ezekiel, too! It’s especially good with tomato soup if you put fresh basil leaves or a dollop of pesto in your grilled cheese! 🙂

    Yumm! In my house we used to have this combo every Friday- I miss that! I like your “adult version” if you will… I think I’m going to have to start up the Friday tradition again… it looks too good! I have to ask- what kind of bread did you use, I’m not familiar.
