Grilled Cheese & Tomato Soup
There’s something about grilled cheese and tomato soup. It’s comforting, delicious, and feeds the soul. After making my Roasted Tomato Bisque yesterday I just knew I had to make a grilled cheese to serve with it. The typical American grilled cheese is made with yellow artificial cheese, white bread, and LOADS of butter. This version is just as good but so much healthier!
Preheat a skillet over medium heat. Lightly butter one side of a slice of Ezekiel bread. Place bread butter-side-down onto your skillet and add 1 slice of cheese. Butter a second slice of Ezekiel bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat as desired with 2 more slices of bread, butter and slice of cheese.
Kids will absolutely LOVE this recipe and you will too! Serve with piping hot Roasted Tomato Bisque and a simple side salad, delish!!
