It’s looking like a giant cold front has hit most of the country. It’s a good weekend to stay in, put up Christmas decorations, and make some fun recipes!! I have a lot of ideas in mind: mulled wine, sweet potato waffles, 2 ingredient pancakes, and no-bake chocolate truffles! We’ll see if I actually find the time to make all of these…!! Here are some other yummy recipes that I look forward to making in the near future:

This gluten-free polenta crust pizza from the William’s Sonoma blog looks like it’s easy enough to make. I absolutely ADORE my cauliflower crust pizza. It has the most amazing texture and taste. Most people would have no idea that it was made from cauliflower…it’s THAT good! The downside is that it is quite time consuming. This method using polenta looks much easier and I’m curious to see if texture is the same. Either way, it’s a great option and a fun weekend experiment!  You could sub my vegan cashew cheese to make it 100% dairy-free! #nomnomnom

These Fudgy Vegan Beet Cupcakes from Minimalist Baker look super moist and delicious! I have yet to try baking with beets but I love the concept. I also love the addition of fresh cocoa powder sprinkled on top! You could substitute quinoa flour and stevia to make it gluten-free & sugar-free. If you try these, let me know how it goes!

There are simply no words for this festive fruit w/ rosemary + vanilla rooibos syrup from Laura at The First Mess. This is one of my favorite blogs with breathtaking food photography and wonderful recipes using fresh local produce. The name of her blog “The First Mess” is taken from M.F.K. Fisher’s An Alphabet for Gourmets, where she refers to the arrival of the first run (or mess) of peas in early spring as “the day with stars on it.” After reading this on Laura’s blog, I promptly ordered The Measure of Her Powers, a collection of M.F.K. Fisher’s writings. I have enjoyed her wit and personal stories. She always incorporates her love of food so this would make a lovely and unique gift for the foodies in your life! And last but certainly not least, these Dark Chocolate Cranberry Pistachio Clusters from A Couple Cooks look incredible, don’t they?! The best part…they are SO EASY to make! Just melt the chocolate and add your toppings! These make the perfect holiday treat or gift without spending hours and hours slaving over the stove. Dark Chocolate has numerous health benefits as do pistachios and dried cranberries. This way you can feel good about sharing your holiday treats with others knowing that you serving something that is delicious AND healthy!
