My Favorite Pinterest Recipes

Are you guys on Pinterest?! If not, you need to get on ASAP!! It is my favorite resource for recipes, fashion, DIY projects, home decor, healthy eating and more! There are just so many great websites and blogs out there so I thought I would share a few of my latest favorites! Here’s a list of my favorite pinterest recipes as of late. These meals are all super healthy and delicious!!


This Brussels Sprouts Breakfast Hash With Eggs from Food For My Family looks absolutely unbelieveable! I think it would make a great meal anytime of day!


Nom, nom, nom, nom…this One Pot Italian Chicken, Mushroom, and Zucchini Skillet looks easy to make, healthy, and filling! I love great hearty homemade meals like this. This recipe calls for a pre-made starter but I think you could just season the chicken with salt, pepper and spices and cook with a little olive/coconut oil instead to get the same effect. I’ll be making this one pot meal very soon!

Italian Chicken, Mushroom, and Zucchini Skillet

These Raw Vegan Tacos are from one of my favorite blogs The First Mess. They are DELICIOUS and LOADED with nutrition!! A great recipe for a spring day. All of the seasonal veggies just POP! This would be a great meal or appetizer for guests too. You can use the leftovers to make a pretty amazing taco salad later on!

This Grilled Zucchini Ribbon and Kale Salad is calling my name! I am OBSESSED with kale salads. They just make me feel SO GOOD! This one is gorgeous, interesting, and elegant! I love the grilled zucchini strips but would eliminate the blue cheese and add a cleaner protein like organic grilled chicken, fish, or hard boiled eggs instead!


I used to make a lot of soups (remember Stewp?!) and dishes using polenta. I’ve not made anything lately but I feel like I need to after seeing this gorgeous Polenta with Winter Salad and Poached Egg!! Gosh it looks good!! I would suggest cooking the polenta with just water & salt according to the label instead of adding the heavy cream and butter. You’ll cut out a lot of fat and calories that way and it still tastes great! I will be trying this recipe very soon!!

Oh my this Shaved Brussels Sprouts Salad with Avocado and Pistachios looks gorgeous and super yummy!! The recipe is super simple and easy to make, always a plus in my book!
