Time Is on My Side

Let’s face it, you’re busy. You’re constantly on the go. You don’t have time to prepare healthy meals for you and your family. I get it. I really do, ’cause guess what? I’m busy too!

In my practice, the most common challenge people face is TIME. There’s just not enough of it! I completely and whole heartedly understand.  I myself have an insane schedule. I have a busy Nutrition Practice, help out 5 days a week at a Pilates studio, manage all aspects of my website, this blog, Facebook Fan Page, Twitter Page, Tumblr account, hundreds of emails, manage all of my own PR and marketing, and there is always so much more that needs to be done… I am a busy, busy girl! So when I say I can relate, it’s because I can!

My advice:

When you are feeling overwhelmed, remember these two things:

“Where there is a will, there is a way” and “practice makes perfect.”

  1. Being successful maintaining a healthy diet means you’ve got to (follow the Boy Scout’s Motto and) always be prepared. It’s a must. You have to take the time/find the time/make the time to get to the grocery store. If you don’t have any groceries at home, you are setting yourself up for failure even before you start!! So get your beautiful butt to to grocery store and stock up pronto!!! That also means that sometimes you’re going to have to wake up early or stay up late to make sure that you’ve got healthy options prepared for the day ahead.
  2. You’re not always going to get it right. Switching to a healthier diet & lifestyle = a lot of trial and error. Don’t beat yourself up if you don’t get it perfect in one shot. I’ve been on this path for 6 years and I still have moments where stress or emotions kick in. The important thing is to recognize it, get back on track and keep moving forward. They say that insanity is doing the same thing over and over again and expecting a different result. Don’t expect to make progress if you are doing the same things that haven’t worked for you in the past… I’m going to give you some tough love here; YOU ARE IN CONTROL. Your success or failure depends on you, and only you. Ultimately you’ve got to put yourself and your needs first and explore the sometimes dark emotional places as to why you’re making unhealthy choices to begin with. You can do it, I know you can – but again, it’s YOU who holds the key.

All of that being said, time is still an issue.  I would say the majority of my meals take 15-20mins or less to make. That’s right, 15-20mins. That’s because, like I said, I am a busy girl!! I don’t have time to make complex 2hr recipes. I like my dishes to be fast, easy, and full of flavor. Take this beautiful salad for example:

Caprese Salad

Just look at this beautiful thing! It was delicious. Really, really, really delicious.  The only thing better than the taste was that it took all of 10mins to put together… and when you make it you won’t have wait to snap pictures like I did so you’ll get to enjoy even faster!

You’ll need:

  • Organic Mozzarella
  • Fresh Basil
  • Heirloom Tomatoes
  • Balsamic Vinegar (I used BioNature brand, it has a really amazing flavor)
  • coarse sea salt
  • fresh ground black pepper

Simply cut the tomatoes into wedges or slices, top with torn basil leaves, mozzarella, a drizzle of balsamic vinegar, a sprinkle of coarse sea salt and fresh ground black pepper.

That’s it. Like I said, 10 minuets. Now that’s what I call Fast Food.

this looks absolutely delicious. So simple. I am a celiac and have hyperthyroidism, a lot of your recipes would fit by dietary guidelines deliciously. Cant’s wait to try them myself!

I’ve been a vegetarian for 25 years now and it’s nice to come across some different menu ideas! My biggest problem is not staying full…I’m always munching on something and now at 43 it’s starting to catch up with me. Any suggestions, I guess I’m still not getting enough protein and fiber?
