Spicy Kale Salad

This is a version of my Favorite Kale Salad which I make ALL the time! Kale is such a nutritional powerhouse but it can be quite bitter and tough in texture….unless you know how to prepare it, then it turns to MAGIC!

I made my Basic Kale Salad recipe at my Live Food Demo a few weeks ago and it was a huge hit! Some people may have been a bit skeptical at first but they all ended up loving it!

This salad is so easy to make and tastes amazing. It’s a wonderful way to get some very serious dark leafy greens into your diet and a big boost of minerals!  This time I added a few extra ingredients to give it a little kick!!

Spicy Kale Salad:

  • 1 bunch kale
  • 1 avocado
  • juice of one lemon
  • 2 TBS Nutritional Yeast Flakes
  • a couple dashes of Tamari
  • sea salt to taste if needed
  • 1/2 dropper liquid stevia
  • dash or more to taste of cayenne and fresh ground black pepper
  • chopped vegetables of your choice

First, grab the kale by the stem and strip the leaves from the stem with your hands. I like to save the stems and use them later in my veggie juices! Again, using your hands, tear the kale into small pieces and place in a large bowl. Scoop out 1 whole avocado and add to the bowl, along with lemon juice and just a dash of sea salt.

Use your hands to squeeze, massage and mix the kale, avocado, lemon juice and salt. Continue until the avocado is mixed in thoroughly and the kale has reduced in volume by about half. Massaging the kale is not only fun but also helps to make the tough leafy greens easier to digest. Taste the mixture and adjust flavors as needed.

Next add the nutritional yeast, tamari, cayenne, and fresh cracked pepper to the kale and mix well.

Finally, top your salad with any raw veggies you like.

    Linda, That looks delicious! I make mine the same way, but add a few drops of stevia to it. Sometimes with fresh sunflower sprouts I grow – which are super easy. LOVE me some kale salad. Could eat it every day and never tire of it. Good night!

    This looks great! I make mine with a lemon and olive oil dressing (with salt, pepper, freshly grated garlic and chili flakes). Then I add some parmesan cheese on top. Yours looks like a nice change, though! What are those nutritional flakes?

    When you make this recipe will you eat the whole amount as a meal or is this more than one meal?
