Peasant Style Veggie Frittata
Who says great meals can’t be fast, easy, and inexpensive?! I LOVE eggs as a simple yet hearty dinner option! I’ve mentioned before how absolutely LOADED with amazing nutrition they are and recipes really don’t get much easier than this!
Organic eggs are inexpensive and cook up in just minutes. Actually, the way I “cook” is not really cooking at all, it’s more like throwing whatever I have on hand together…and this is another one of those dishes. All you have to do is add any veggies in the kitchen et voilà a satisfying, healthy, delicious meal is complete! Perfect for busy moms, students, and anyone on a budget.
Peasant Style Veggie Frittata
- 4 organic eggs
- any veggies you have on hand: I used shredded carrots, broccoli, spinach, diced red onion and button mushrooms
- chevre style goat cheese
- organic butter
- sea salt and pepper to taste
- mixed greens
In a medium size skillet over medium high heat melt a small pat of butter. Add garlic and diced red onions and saute until soft. Then add chopped vegetables and sea salt to taste. Cover and let cook for 3-4 mins or until soft.
Next pour wisked eggs evenly over the vegetable mixture and cook for a minute or two until the eggs start to set. Then sprinkle with crumbles of chevre style goat cheese.
Reduce heat to medium-low and continue to cook until the frittata is almost set but the top is still runny, about 2 minutes. Then place the skillet under the broiler until the top is set and golden brown on top, about 5 minutes. Sprinkle with fresh cracked pepper and let the frittata stand 2 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a plate to cut into slices. Serve on top of a bed of greens of your choice. I used local arugula.
