Two days down! How is everyone doing? Day 2 was much easier for me. It may have had something to do with the EPIC salad I made for dinner (see recipe below)…but who knows, you’ll just have to make it for yourself and see!

In the morning I was craving something warm and comforting so I decided to start my day with some CocoCeps! I’ve talked about CocoCeps before as a great coffee replacement. It’s basically just coco powder + medicinal mushrooms. It tastes AMAZING and it’s increadibly good for you!! You can read more about the health benefits here.

I actually wasn’t very hungry today, especially compared to yesterday where I felt like nothing could satisfy me!

I snacked on some veggies and raw hummus during the day and drank lots of Raspberry Lemonade made from herbal tea. I made 2 gallons of this at the beginning of the week so I could sip on it anytime. I always try to make big batches of my weekly staples so during the busy work week I can just grab what I need and go! No muss, no fuss! Preparation is ALWAYS key in maintaining a healthy lifestyle.

And now on to dinner which was truly amazing. I’ve eaten a lot of salads in my day and I would say this one ranks right up there in the Top 10. I am so excited to share this recipe with you because I know you are going to LOOOOOOVE it!!

Best Salad Ever

For the salad base you’ll need:

  • Mixed Greens
  • Finely shredded cabbage and carrots – I just bought the pre-shredded raw coleslaw mix from my local health food store
  • 1/2 an avocado, diced
  • 1/2 a pint of cherry tomatoes, halved
  • Lemon vinaigrette
  • 1 Tbs Hemp Seeds

In a large bowl layer mixed greens, shredded cabbage, avocado and halved cherry tomatoes. Drizzle a small amount of lemon vinaigrette lightly on top. Focus mainly on the marinated shallots, they are the best part!! Then sprinkle your hemp seeds on top.

For the spicy Red Pepper Dressing you’ll need:

  • 7 ounces red bell pepper (about 2 medium sized peppers)
  • 1/4 cup raw walnuts
  • 1/4 cup hemp seeds
  • 1 Tsp lemon juice
  • 1 tsp Molasses
  • 1 tsp Cranberry Juice
  • 1 tsp Cumin
  • 3 garlic cloves
  • 1 tsp red pepper flakes
  • 1/4 tsp salt to taste
  • 2 Tbs water or more to blend

Add all ingredients to a high speed blender like a VitaMix or a food processor and blend until smooth.

Place several spoonfuls of the Red Pepper Dressing in the corner of a plastic bag and cut the tip with a sharp pair of scissors (you can watch a tutorial here). This will act as a piping bag so you can make pretty designs with your dressing 🙂 Use the piping bag to drizzle your dressing over the salad and prepare to be blown away by #1 how gorgeous it looks, and #2 how amazingly delicious it is!!

    This salad was DIVINE! Yes, the best salad ever! I stepped out of the room for a moment when we were eating this salad and heard Scott in the kitchen saying, “Wow! This is SUCH A GOOD salad!” I just smiled! He loves his salads, but when he says THAT, you know it is GOOD! The spicy pepper dressing is really nice and will accompany many different meals (zucchini noodles, salads, nori rolls, green wraps, etc.) Another favorite and addition to the recipe board on Pinterest.     Linda hi I gave everyone different menu options for our family weekend cleanse and your best salad ever recipe was picked is there any other option besides the walnuts? I have a severe nut allergy. What can we use? I have raw sesame, sunflower & pumpkin seeds, or roasted soy nuts. Or do you have any other suggestions? Just so you know everyone doing this cleanse are adults. The only way everyone was agreeable to this weekend 1st I had to make my famous smoothies for breakfast lunch and dinner LOL and 2nd I printed out several meal/snack choices and letting them choose the meals and snacks they wouldbe willing to eat, I really want them to see its possible to have healthy food that is Yummy too. When I 1st brought this idea up I heard “tree bark” ” rabbit food” and worse if they only knew I put spinach into my smoothies LOL! Everyone is pretty excited and proud I think because they are sharing “we are doing a cleanse this weekend” with everyone I hear them talk to. I have my foot in the door and I want to make this a positive experience for all any other suggestions? 🙂

    My family is getting ready to try out a 30 day clean eating program. We will be trying many of your recipes. My question to you in regards to this recipe is- instead of walnuts, could almonds be used? My daughter is allergic to all nuts except almonds. Thank you! I appreciate all your information and recipes!

    What if I don’t have Molasses? Can I use Agave nectar or something else?
