Cleanse America Day 2
Two days down! How is everyone doing? Day 2 was much easier for me. It may have had something to do with the EPIC salad I made for dinner (see recipe below)…but who knows, you’ll just have to make it for yourself and see!
In the morning I was craving something warm and comforting so I decided to start my day with some CocoCeps! I’ve talked about CocoCeps before as a great coffee replacement. It’s basically just coco powder + medicinal mushrooms. It tastes AMAZING and it’s increadibly good for you!! You can read more about the health benefits here.
I actually wasn’t very hungry today, especially compared to yesterday where I felt like nothing could satisfy me!
I snacked on some veggies and raw hummus during the day and drank lots of Raspberry Lemonade made from herbal tea. I made 2 gallons of this at the beginning of the week so I could sip on it anytime. I always try to make big batches of my weekly staples so during the busy work week I can just grab what I need and go! No muss, no fuss! Preparation is ALWAYS key in maintaining a healthy lifestyle.
And now on to dinner which was truly amazing. I’ve eaten a lot of salads in my day and I would say this one ranks right up there in the Top 10. I am so excited to share this recipe with you because I know you are going to LOOOOOOVE it!!
Best Salad Ever
For the salad base you’ll need:
- Mixed Greens
- Finely shredded cabbage and carrots – I just bought the pre-shredded raw coleslaw mix from my local health food store
- 1/2 an avocado, diced
- 1/2 a pint of cherry tomatoes, halved
- Lemon vinaigrette
- 1 Tbs Hemp Seeds
In a large bowl layer mixed greens, shredded cabbage, avocado and halved cherry tomatoes. Drizzle a small amount of lemon vinaigrette lightly on top. Focus mainly on the marinated shallots, they are the best part!! Then sprinkle your hemp seeds on top.
For the spicy Red Pepper Dressing you’ll need:
- 7 ounces red bell pepper (about 2 medium sized peppers)
- 1/4 cup raw walnuts
- 1/4 cup hemp seeds
- 1 Tsp lemon juice
- 1 tsp Molasses
- 1 tsp Cranberry Juice
- 1 tsp Cumin
- 3 garlic cloves
- 1 tsp red pepper flakes
- 1/4 tsp salt to taste
- 2 Tbs water or more to blend
Place several spoonfuls of the Red Pepper Dressing in the corner of a plastic bag and cut the tip with a sharp pair of scissors (you can watch a tutorial here). This will act as a piping bag so you can make pretty designs with your dressing 🙂 Use the piping bag to drizzle your dressing over the salad and prepare to be blown away by #1 how gorgeous it looks, and #2 how amazingly delicious it is!!
