One of my clients asked me to do a “What I Ate Wednesday” post (hi Chelsea!) so here is a look into a typical day for me.

I usually like to start my day with something warm; either hot water with lemon, tea (this one is my absolute favorite), or coffee. I just do whatever feels right that day. This particular day I was craving coffee which I always make in my french press. I am a little bit of a coffee snob and I think french press coffee is the best by far! I usually get organic coffee and espresso from Trader Joe’s and use a 50/50 mix – I like my coffee strong!! I have it with homemade almond milk + stevia and it is so, so good!!

I had a very busy morning so ended up having breakfast for lunch which is very common for me. Usually I’ll have a juice mid-morning but didn’t have a chance on this particular day.

For lunch I made a 2 egg scramble with broccoli, red onion, spinach, avocado, and sprouts. Notice the ratio of eggs to veggies. Veggies should always be the main event when it comes to healthy living and weight loss! They are cleansing, filling, and super nutrient dense!

For this dish I simply tossed all the veggies in a saucepan with a little water, garlic salt & fresh cracked pepper and covered with the lid to let the veggies steam until just slightly soft. Then I added two eggs, stirring until cooked. Top with sprouts and avocado slices, more cracked pepper, and your favorite hot sauce! Yummmm, so good and really easy to make!

The eggs + veggies kept me full until dinner time. I had dinner while watching the National Championship game (so glad UCONN won since they beat my alma matter, Iowa State in the Sweet 16).

I absolutely adore kale salads. My favorite way to prepare them is throw everything in a ziplock and SHAKE!! This one had kale, raw corn, red onion, almonds, dried cranberries, tomatoes, Garlic Expressions dressing & Sriracha. Throw everything in the bag and shake until well combined. Then top with your favorite protein. Mine was a spicy baked wild caught salmon.

I also enjoyed a glass of Pinot Noir (my fave) while watching the game. 2012 California Coast reds are pretty fabulous, 2012 was a very good year!

I also had several squares of dark chocolate for dessert. Chocolove’s Extra Dark bar is my absolute fave! It’s super dark but tastes so smooth and creamy compared to most other dark chocolates!


And there you have it, a day in my life! I’ll do more of these posts as my meals and quantities really do vary quite a lot. I am very instinctual with my eating. So when I’m hungry, I eat! And when my appetite is not as strong I tend to eat a little less. I think it all balances out in the end so I don’t stress about quantities and portion sizes, I just let my body do it’s thing!
