As usual, I woke up bright and early (love waking up early!) and started the day with iced coffee; this Vanilla Chameleon Cold Brew is my favorite, it’s soooooo good!! They say it’s the best coffee you’ve ever tasted and it’s true! I added stevia and took my 80 billion probiotic (use code WAG472 to get $5-10 off first purchase). I actually ran out of probiotics for about a week and boy could I tell a difference! I was so bloated and uncomfortable over the weekend. I personally notice such a difference when I take these, I just need to make sure I don’t run out next time!

I’ve also started taking a digestive enzyme with each meal. My stomach just isn’t quite the same since my bout of food poisoning so I’m trying different things to see what works. It’s only been a few days but the combo of enzymes + probiotics definitely has my digestive system feeling much better!

In the morning I snacked on nectarines, they are SO GOOD right now! Holy yum!!

And tons of watermelon. It’s probably my favorite fruit. I love it nice and cold, fresh out of the fridge! (You can get that great watermelon knife here).

For lunch I had 2 plain scrambled free range eggs with lots of homemade chopped salsa. The salsa had grape tomatoes, avo, red onion, jalapeno, lime, sea salt & pepper. You can see the original recipe here. I also had 2 pieces of toasted ezekiel bread (not pictured) with a spread of hummus and the same salsa on top!

Later I snacked on assorted crudite and hummus. I’m really liking original and spicy hatch chile from Central Market.

All day I sipped on Coconut La Croix with stevia. So good! Definitely my favorite drink at the moment, it makes staying hydrated easy!

For dinner I had a very simple salad of romaine lettuce, cherry tomatoes, and grilled chicken.

    I really do not like the taste of stevia. It tastes artificial, like equal rather than sugar. A lot of your recipes call for stevia – what do you recommend as an alternative?

    I sooooo wish I could find the Vanilla Chameleon Cold Brew in Florida!!! My mouth drools with the thought of it…lol Although, I was told the best way to make Cold Brew Coffee from an Organic Coffee Bean Roaster in Maggie Valley, North Carolina. It is pretty darn good….I put 8 scoops of coffee in my french press (I use a Vanilla Roast – organic when I can find it – if not, Starbuck’s Vanilla is good)…..fill with filtered water and do NOT press. Put in the refrigerator for at least 24 hours (he said that is the key) – then press. I then put it in a cool jar – then start a new press for the new day…:-)
