I’ve been in Southern California on vacation with my family this past week. We are celebrating my Dad’s 70th birthday, my parents 40th wedding anniversary, and my nephew’s 2nd birthday so there’s lots to be thankful for!!
With all the excitement I haven’t kept a complete log of what I’ve eaten everyday but here’s a look into some of my meals. I’ve also posted these on Facebook & Instagram as well!
We are renting a house with a kitchen so have had the luxury of going to the grocery store and buying/preparing our own food when we want to. Breakfast has typically been watermelon and or mangos.
I’ve been taking advantage of staying right on the ocean and going on lots of beach walks. After walking I’ll have some scrambled eggs with greens and avo. I’ve also been loving the acai bowls from Sambazon, so yummy and refreshing after a long walk on the beach!
We’ve been eating out much more than I am accustomed to so the other day I made a GIANT kale salad with tomatoes, carrots, cucumbers, purple cabbage, yellow bell peppers, greek marinated chicken (leftover from a previous dinner at Acropolis) and Brianna’s French Vinaigrette. I just have to have my kale, I don’t feel right without it!
Yesterday I had another super yummy kale salad with shredded carrots and Brianna’s French Vinaigrette. I topped it with a delicious homemade quinoa salad made with cooked quinoa, diced yellow bell peppers, cherry tomatoes, sugar snap peas, cilantro, green onions, lemon, sea salt & pepper. Let it sit overnight to marinate. It’s so good on everything!!
Long walks, fruit, and homemade salads have balanced out the eating out and alcohol consumption. I’ve also made sure to have my probiotics and oregano oil on hand so that my digestive system stays in tip top shape!
