Thank you all for bearing with me while I work on a few other projects I have going on! I apologize for the lack of posts, but I will try to share and blog recipes as much as I can! Since my life has been extremely hectic lately, I’ve really been leaning on 5 Min Meals to stay healthy! I know time is usually a very big obstacle for most people when it comes to maintaining a healthy lifestyle and I want to show you that a healthy, meal can be made in just minutes!!

These 5 Min Spinach & Goat Cheese Quesadillas  are easy to make and really delicious! Both kids and adults will love this easy recipe! These quesadillas keep well in the fridge for a few days so feel free to make them ahead of time to take to work or school for lunch.

5 Min Spinach & Goat Cheese Quesadilla Recipe

You’ll need:

  • 2 tortillas – I like using uncooked tortillas, I found Two Tias brand at Costco
  • 1 handful baby spinach
  • 2 Tbs chevre style goat cheese crumbles
  • 1/4 an avocado
  • salsa

Place one tortilla in a large cast iron skillet over med-high heat. Layer it first with 1 Tbs goat cheese crumbles, then add avocado, fresh spinach leaves, another Tbs of goat cheese, and then finally, top with the second tortilla. Let sit for about 2-3 mins, continuously checking the bottom of the tortilla. Once the tortilla has started to brown. Press down with a spatula and then flip the entire quesadilla over. Let sit for another 2-3 minutes.

Once your tortilla is browned on both sides, remove from skillet and cut into 4 sections with a very sharp knife.

Serve with your favorite salsa and enjoy!

Ingredients
  • You’ll need:

Keeping to the theme of New Year’s detoxing, this raw Chopped Detox Salad is a great way to get your bod in tip top shape quickly! Raw veggies are packed with nutrition but they are also full of enzymes and LOADED with fiber which plays a vital role in weight loss!

Fiber is only found in foods from plants, such as greens, nuts, vegetables, and fruits. It passes through the body with very little change in the digestive system. That means that fiber provides few or no calories, in addition to having many health benefits.

Fiber provides many benefits. While maintaining the health of the digestive tract, it also lowers the risk of certain cancers, heart disease, and diabetes. It helps control the appetite, so it’s easier to keep weight in check. Because it is found only in plant foods, vegetarians tend to have very high fiber intakes, which may be one of the reasons vegetarians are generally healthier and slimmer than meat–eaters. (source)

A high-fiber diet has many benefits, which include:

  • Normalizes bowel movements. Dietary fiber increases the weight and size of your stool and softens it. A bulky stool is easier to pass, decreasing your chance of constipation. If you have loose, watery stools, fiber may also help to solidify the stool because it absorbs water and adds bulk to stool.
  • Helps maintain bowel health. A high-fiber diet may lower your risk of developing hemorrhoids and small pouches in your colon (diverticular disease). Some fiber is fermented in the colon. Researchers are looking at how this may play a role in preventing diseases of the colon.
  • Lowers cholesterol levels. Soluble fiber found in beans, oats, flaxseed and oat bran may help lower total blood cholesterol levels by lowering low-density lipoprotein, or “bad,” cholesterol levels. Studies also have shown that fiber may have other heart-health benefits, such as reducing blood pressure and inflammation.
  • Helps control blood sugar levels. In people with diabetes, fiber — particularly soluble fiber — can slow the absorption of sugar and help improve blood sugar levels. A healthy diet that includes insoluble fiber may also reduce the risk of developing type 2 diabetes.
  • Aids in achieving healthy weight. High-fiber foods generally require more chewing time, which gives your body time to register when you’re no longer hungry, so you’re less likely to overeat. Also, a high-fiber diet tends to make a meal feel larger and linger longer, so you stay full for a greater amount of time. And high-fiber diets also tend to be less “energy dense,” which means they have fewer calories for the same volume of food. (source)

For the chopped salad you’ll need:

  1. a base of assorted greens – I used spinach, kale, arugula, and shredded purple cabbage
  2. veggies of choice – I used shredded carrots, broccoli, green bell peppers, diced radishes and yellow squash, halved grape tomatoes, and diced avocado
  3. nuts & seeds of choice – I used hemp seeds, pumpkin seeds, and chopped almonds
  4. dried fruit – I used cranberries
  5. vinaigrette dressing of choice – I used my homemade Liquid Gold salad dressing recipe (see below)

Simply layer all your ingredients together in a large salad bowl, toss, and ENJOY!! This makes a great lunch or dinner meal and the best part?! You can have as much of it as you want!! There is no limit on the quantity! You can also mix it up by using different kinds of veggies.

Liquid Gold Dressing (adapted from The Raw Food Detox Diet):

  • 2 cups fresh squeezed lemon juice
  • 3 whole cloves garlic
  • 3 Tbs fresh minced ginger
  • 3 Tbs Tamari (available through iherb.com or in the Asian section at your local health food store)
  • 2 droppersful NuNaturals liquid stevia (alternately you could use 3 heaping tsps raw honey)
  • 1.5 cups cold-pressed olive oil
  • handful of brazil nuts (about 8 total) – just 2 Brazil nuts a day will provide you with your daily selenium requirements!

Simply blend all ingredients in a high speed blender until smooth. This will make about 4 cups.

They are the ONLY blender that will get you the creamy consistency that you desire, especially when using nuts.  I love, love, LOVE my VitaMix and highly recommend investing in one if you are ready to make serious changes to your diet. I have had mine for almost 5 years and use it daily! Skinny Chicken Broccoli and Quinoa Casserole

I grew up in the Midwest and cold weather always makes me think of casserole. I probably consumed over 2,000 casseroles during my childhood years (haha, kidding…kind of) and I loved them! It wasn’t until I was older that I realized how fattening most casseroles are and how devoid in nutrition, especially when using canned cream soups. You can read more about the toxins in cream of chicken soup here and cream of mushroom soup here

I was craving a casserole type of dish and decided to put my own healthy spin on it. I’m really happy with the result and I know it’s good healthy food that the whole family (even kids and picky eaters) will love!!

Skinny Chicken Broccoli and Quinoa Casserole

Skinny Chicken Broccoli and Quinoa Casserole

You’ll need:

  • 4 organic chicken breasts, cut into 1 inch cubes
  • 2 cups cooked white quinoa (mine was left over from the quinoa bowls I made earlier in the week)
  •  1lb raw cheese, grated – I used Alta Dena Pepper Jack Cheese but feel free to use any of your favorites!
  • 4 cups raw broccoli florets
  • 2 cups raw baby spinach
  • 2 cups organic chicken broth – I used homemade bone broth, so much more nutritious and tastes SO much better!
  • 2 Tbs Adobo seasoning
  • garlic salt & pepper to taste
  • 1 tsp red pepper flakes (optional but I like a little kick!)

Preheat your oven to 400 degrees F.

In a saucepan over med high heat, bring chicken stock to a boil and add diced chicken breasts. Cover and cook until chicken is cooked through, about 7-10 mins.

While chicken is boiling, get a large 9 x 13 baking dish and layer with about 1 cup cooked quinoa, 2 handfuls of raw spinach, and about two cups raw broccoli florets. Once chicken is cooked, add it to your baking dish and layer again with the rest of your qunioa, spinach, and broccoli. Add the remaining chicken broth and top the entire dish with spices and grated cheese. You might feel like your dish is overflowing but that’s ok as it will reduce significantly during cooking.

Place your dish on the center rack of the oven and cook uncovered for about 30-45 mins or until the cheese is golden brown.

Remove from oven and let cool for about 10mins. Serve on it’s own or, if you’re like me, you can serve it on a bed of baby spinach with extra steamed broccoli on the side!

Skinny Chicken Broccoli and Quinoa Casserole

This is a really warm and comforting dish that’s also very healthy! Quinoa is a superfood that is bursting with protein and fiber, the addition of spinach and broccoli adds iron, vitamin C, folic acid, vitamin A, calcium, antioxidants, vitamin B2 and K! This dish is also gluten free and sugar free.

This dish will serve 6-7 people and will also freeze well to have later.

Hearty Winter Quinoa Bowl

My oh my, it has been SO UNUSUALLY COLD for just about everyone in the country!! We have had record lows all week here in Austin with freezing temperatures and rain! When this kind of weather hits I have absolutely no desire for salads or traditional healthy foods, I want something warm and comforting!

Luckily, this dish is warm, comforting, AND healthy! For those of you that follow me, you know I am a huge fan of quinoa bowls! They are filling, hearty, healthy and delicious! They are also very easy to make. This Hearty Quinoa Comfort Bowl was simply pieced together using different veggie side dishes that had been made throughout the week.

The sweet potatoes were bought (already peeled and diced) from Trader Joe’s then baked with a little olive oil, salt, and herbs de Provence. I originally planned to use them as a yummy breakfast hash! The cauliflower was leftover from a cheesey cauliflower bake (will post that recipe soon – this could be a decent substitute just omit the butter and use a little less cheese), and the balsamic brussel sprouts and broccoli are from this recipe.

To complete the dish, I simply cooked a pot of quinoa and served in a bowl, layered with fresh spinach then topped with the reheated veggies I had from the week. I added a few sliced cherry tomatoes which I heated with the other veggies to soften and bring out their sweetness.

This is a super satisfying dish to have on a cold day and a great way to transform or use up any leftover veggies from the week. You could also add some grilled chicken or grass fed steak if you would like more protein. Some slivered almonds or pine nuts would also add a nice little crunch if you’re in the mood!

A meal like this is extremely healthy but still satisfying because there is so much flavor and it’s so filling! I truly enjoy eating clean and always feel satisfied with dishes like this!

Easy Artichoke, Spinach, & Herb Frittata

As you know, I am a huge fan of eggs, specifically pasture raised eggs! They are wonderful for so many reasons. First of all, they taste waaaaay better than regular eggs and are far superior in nutrition. A comparison of nutritional data for caged versus free range eggs found, on average, the free range eggs had:

  • Twice as much omega-3 fatty acids.
  • Three times more vitamin E.
  • Seven times more pro-vitamin A beta-carotene.
  • A quarter less saturated fat.A third less cholesterol. (source)

Other tests have demonstrated that pastured eggs have up to six times more essential vitamin D than regular supermarket eggs. They have also been shown to have significantly more B vitamins than a factory egg.

Meet “Tiny”, she’s a very happy backyard hen! She eats bugs, grass, organic feed, lettuce and she LOVES watermelon!! I mean LOVES it!! Here she is happily enjoying a watermelon rind in the backyard 🙂

I’ll be sure to do a post soon on how to get started raising backyard hens. It’s really fun and once you get everything set up, is actually a lot easier then you would think!

Tiny is a Speckled Sussex and lays brown eggs. We also have an Ameraucana that lays blue green eggs.

Free Range Eggs

If you don’t/can’t have backyard chickens, I would always recommend buying free-range organic eggs when possible. They taste much better and are so much more nutritious than regular eggs. While they are more expensive, they are totally worth it!! I posted this quote on Facebook the other day and it’s so true!! “People will pay $5 for one drink at Starbucks, but say $5 for a dozen organic eggs is too much.” Priorities people!! I would forgo Starbucks coffee, mani/pedi, or new dress any day for good, healthy clean food!!

Easy Artichoke, Spinach, & Herb Frittata

I love this recipe because it’s so easy to make and LOADED with amazing nutrition!!

You’ll need:

  • 6 organic free range eggs
  • 1 4 ounce jar of marinated artichokes, drained
  • 1 broccoli floret chipped fine
  • about 1/2 a cup of leftover TJ’s broccoli slaw left over from this recipe
  • 1 cup baby spinach
  • 4 green onions finely sliced
  • 3 shallots diced
  • 4 gloves garlic, minced
  • 2 Tbs fresh herbs of choice – I used chives and parsley
  • olive oil
  • sea salt & fresh cracked pepper to taste
  • chevre style goat cheese

In a pan/skillet over med-high heat add a drizzle of olive oil and saute minced garlic and shallots for 1-2 mins. Add some sea salt and fresh cracked pepper to bring out the flavor of the onions and garlic. (Side note: all veggies and I mean ALL, taste great sauteed with just a bit of olive oil, garlic, sea salt and pepper!!)

Then add broccoli slaw and broccoli, stir in and let cook for another 4-5 mins until soft.  Next, stir in spinach until wilted. Season with salt and pepper as needed.

While veggies are cooking finely chop herbs and add to eggs in a large bowl. Whisk until fully incorporated.

On the stove top, raise the heat to medium high and pour in whisked eggs evenly over the vegetable mixture. Stir in the eggs and then top with artichoke hearts. Cook for a few minutes until the eggs start to set.

At this time, preheat your oven and set to “Broil” at 500 degrees.

Reduce stovetop heat to medium-low and cook until the frittata is almost set but the top is still runny, about 2 minutes. Then put the skillet in the oven under the broiler until the top is set and golden brown on top, about 5 minutes. Sprinkle with fresh cracked pepper and let the frittata stand 2 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a plate to cut into slices.

You can garnish with crumbled goat cheese and sriracha! The goat cheese adds a lovely tart creaminess and the sriracha gives it some great spice!!

This recipe is very versatile. As you can see, I used leftover veggies and herbs from a previous recipe. There are no rules with frittatas! You can use any veggies you like and the herbs in the summertime are so fresh and delicious, they add a wonderful dimension to your dishes!!

The other thing about frittatas is that they are FAST!! I love making them as a quick lunch or dinner meal and truthfully, I almost never make them for breakfast unless I have guests over! It’s my version of fast food. Instead of thawing out a frozen dinner, I ‘ll make a frittata instead, it’s just as fast, MUCH more nutritious and definitely more delicious!!

One Pot Veggie Quinoa Bowl with Fried Egg Topper

This recipe is a strange one, I know, but it was actually really good and a perfect example of the type of recipe I make when I’m in a pinch!! I’ve been so busy with work, writing my 21 day detox book coming out next month, suffering from allergies, and am definitely not on top of my grocery shopping this week! But hey, I’m human, and I do the best that I can. When things are hectic, I improvise! Don’t let perfection get in the way of your diet, do the best you can with what you have 🙂

I’m still in desperate need of getting to the grocery store but as my clients know, I’ve been suffering from some pretty severe Texas allergies and am just trying to stay afloat! I had some random vegetables in my fridge, I always keep quino in my pantry, and I still had some farm fresh eggs to use up.

I decided to make a one pot veggie quinoa bowl using a bag of shredded carrots, left over broccoli florets, the last of my baby spinach, some kale that I had left over from juicing, and a bag of frozen peas.

I cooked the quinoa using chicken broth and added the carrots and broccoli to the pot. I let everything cook down until all the water was absorbed and then stirred in my baby spinach, kale leaves, and frozen peas which thawed as I stirred them into the mixture. Add salt, pepper, and desired spices as you go.

Notice the ratio of veggies to quinoa. There are actually more veggies than quinoa. This is how I always do it! Don’t be afraid to just go for it. Use each meal as an opportunity to fill your body with the maximum amount of mineral dense vegetables! The combo is delicious and your body will thank you, thank you, thank you!!

While I do love my veggies, I’ve also been on a bit of a protein kick lately so I decided to add a fried egg on top to satisfy my craving. It’s not perfectly combined with the quinoa but it’s ok every now and then and this combo in particular suits me just fine. A couple dashes of Crystals hot sauce and you’ve got yourself a super satisfying meal in a pinch!

While this isn’t necessarily a meal I would serve to dinner guests, it’s certainly a delicious meal on a busy weeknight. I always try to encourage my clients to be flexible, improvise, and do the best they can with what they’ve got. This a perfect example of that. So, the next time you are feeling overwhelmed and ready to order take out, take a look in your fridge and see what you can come up with instead! It will buy you a little time until you can get to the grocery store and will be MUCH healthier than fast food!

One Pot Veggie Quinoa Bowl with Fried Egg

A delicious meal for a busy weeknight. The next time you are feeling overwhelmed and ready to order take out, take a look in your fridge and see what you can come up with instead! It will buy you a little time until you can get to the grocery store again.
Ingredients
  • 1 cup red, white quinoa mixture
  • 2.5 cups chicken broth
  • 1 bag shredded carrots (10oz)
  • 1 large broccoli floret, diced fine
  • 2 cups raw baby spinach
  • 1 cup shredded kale
  • 1 bag frozen peas (16 oz)
  • salt & pepper to taste – add additional seasonings as desired like Adobo or lemon pepper
Instructions
  1. In a large pot over medium high heat add broth, quinoa, carrots, broccoli and salt and pepper to taste. Cover and cook until all the water is absorbed – about 15 mins
  2. Then stir in spinach, kale and frozen peas. Add more salt and pepper if needed.
  3. Serve as is or top with fried organic egg.
  4. Enjoy!
