It’s crazy to think that it’s almost mid February!! Spring break is only a month away and with spring break usually comes beaches and warmer weather (thank goodness)!! As you know, I love juicing as my go-to for a quick slim down. Plus it makes you feel absolutely WONDERFUL both inside and out! I know most of us are typically focused on the vanity of health but there really is no replacement for feeling good internally!

This Beach Babe Juice aids in weight loss while acting as a detoxifier and appetite suppressant when drunk first thing in the morning.

Here is a breakdown of nutrients and benefits of the Beach Babe juice.

The carrots provide antioxidants and vitamin A which helps the liver to cleanse toxins out of the body. Carrots also support the skin and help to create that beautiful GLOW.

The citrus in this juice provides the body with hesperidin and diosmin which are bioflavinoids found in citrus fruits like lemons, limes and oranges. These bioflavinoids support:

  • fat metabolism
  • healthy cholesterol levels
  • active metabolic function
  • healthy veins (great for bulging veins and varicose veins!!)

This juice also contains blackberries and raspberries which are bursting with skin clearing antioxidants. They’re also jam packed with polyphenol antioxidants, according to Dr. Perricone. Berries are also rich in antioxidants and anthocyanins which are associated with a lower risk of certain cancers, urinary tract health, memory function, and healthy aging. This belly buster green juice is a powerful one! I know everyone is ready to rock their New Year’s resolutions so I thought I would share one of my favorite juice recipes for busting belly fat and jump-starting your metabolism!

This belly buster juice is loaded with citrus fruits, including their skins. Normally, I peel my citrus before juicing because the essential oils in the skin can make the juice bitter. In this case, we’re going to keep the skin due to the high amounts of hesperidin and diosmin. Hesperidin and diosmin are bioflavinoids found in citrus fruits like lemons and oranges. These bioflavinoids support:

  • healthy cholesterol levels
  • active metabolic function
  • healthy veins (great for bulging veins and varicose veins!!)
  • immune system function
  • fat metabolism
  • inflammation

While these bioflavinoids may taste slightly bitter, the benefits are well worth it! I created this combination specifically with health benefits and taste in mind so it’s actually still quite tasty! In all honesty, I think most of us can endure a little bitterness in exchange for a flat belly and amazing health benefits, am I right?!

I recommend having this juice daily as your breakfast meal. Substituting juice for breakfast is a great way to reduce your food intake while still getting ample vitamins and minerals. Most people find that they don’t even miss having solid food for breakfast because juicing makes them feel so satisfied due to the high content of nutrients. Personally, I always feel a nice little ZING from juicing that energizes me in such a clean and lovely way. Try it and see how you feel! If you’re not ready to substitute juice as a meal, you can have it as a snack in between meals. You will still get great benefits from doing so!

  • 3 medium apples (I used fuji)
  • 1 large cucumber
  • 1 large lemon, including skin
  • 1 lime, including skin
  • 3 small mandarins, including skin
  • 1 head romaine lettuce

First wash the skin of your fruits and veggies. I always use this wash. Because we are using the skin, try to get all organic if you can.

Then simply run all ingredients through a juicer (I recommend Breville) and feel the ZING!! (Makes 32oz)

And, if you have backyard chickens like we do, be sure to give them the leftover pulp. They love it!

I’m SO EXCITED to share this recipe with you! One of my good friends was in town last night and came over for dinner. He said that he’s not typically a fan of kale but absolutely loved this salad and the way the kale mixed in with the other ingredients.

Anytime I am making a salad I want everyone to enjoy, I add a lot of different ingredients. It just makes the dish so much more interesting and fun. This salad has a lot of components and will take a little prep time but it is SO worth it. It’s one of my favorite salads I’ve ever made! The flavors just compliment each other so nicely!

This salad is gorgeous too, don’t you think?! I’m sure I’ll be making it again for Thanksgiving and Christmas since the pomegranate makes it so festive!

Kale Salad with Butternut Squash, Quinoa, Avocado, Pomegranate and Garlic Sriracha Vinaigrette

You’ll need:

  • 1 head kale, stems removed and leaves torn into small pieces.
  • seeds of 1 pomegranate (Trader Joes & Costco sell them already de-seeded)
  • 2 cups quinoa
  • 4 cups peeled & diced butternut squash – about 1 large squash (Trader Joes & Costco sell them already peeled and diced)
  • 1 sweet onion, diced
  • 1 large avocado, diced
  • chili lime seasoning – I actually found mine at Home Goods but they also carry it on Amazon. A must try, it’s amazing!!
  • Garlic Expressions salad dressing
  • Sriracha
  • olive oil
  • salt & pepper

Preheat oven to 425 degrees.

First prepare your butternut squash. If you are using a whole butternut squash, peel your squash, remove inner seeds with a spoon, and cut it into cubes. Toss with a drizzle of olive oil, a little sea salt and 1 Tbs chili lime seasoning (I always use a ziplock bag for this step). Place on a large baking sheet covered with aluminum foil and bake, tossing occasionally, until edges begin to brown, about 30-40 mins. I sometimes broil them for a few minutes right at the end to get them nice and crispy but that is purely optional!

While your squash is cooking, cook your quinoa. In a large saucepan over medium high heat add 2 cups of quinoa to 4 cups of water. Cover and let cook until all the water is absorbed, about 20 mins.

While your quinoa is cooking, prepare your carmelized onions. In a medium sized saute pan over medium high heat, add a drizzle of olive oil and let it begin to simmer. Then add diced onions and a dash of salt and pepper. Stir to coat and let cook down, stirring occasionally until golden brown. Remove from heat and set aside. 

Once your quinoa is done cooking, toss it in a large bowl with kale pieces, caramelized onions, and a generous drizzle of Garlic Expressions and Sriracha to taste. Taste and adjust dressings according to taste.

Top with cooked butternut squash, avocado slices, and fresh pomegranate seeds.

This salad takes a few more steps than most of my other recipes but boy is it worth it!! The combo of Garlic Expressions with Sriracha is one of my favorites and my go-to combination for salads. I highly recommend that you try it but if you don’t like spicy food, simply omit the sriracha.

The baked butternut squash is amazing on it’s own and out-of-this-world when combined with the other flavors of this salad. All the flavors and textures are represented here: sweet, savory, spicy, tart, creamy, crunchy; it’s like a party in your mouth. It’s just so good!

Enjoy it on it’s own or with cooked protein like grilled chicken or salmon. I highly encourage you to share this with family and friends. This recipe as it’s written makes a very large portion and can serve up to 6 as an entree so you’ll have plenty to share!

This was the first time in a long time that I took a REAL vacation as in, no emails, no phone, barley any internet. I was truly disconnected and it was really nice! I ate lots of great food (too much probably)!! So now it’s back to the real world and time to get on track again! I’ve been feeling a little puffy and “off” since I got back so decided this Metabolism Master juice recipe would be great to get my system revving again!

As many of you know, one of my favorite treats in the summertime is a nice, cold acai bowl. I love acai because it’s t’s a great way to sneak in a ton of immune boosting minerals and anti-oxidants into your diet. You can have acai bowls for breakfast, lunch or snacks. They are great anytime!

Some of the amazing health benefits of Acai are:

In fact, Brazilians have been eating acai berries for centuries to treat skin conditions.

5. Helps with Digestive Upset: Taking acai may also aid in keeping our digestive system clean and in optimal function. The berries have powerful detoxification capacities in the human body and is a well-known traditional source of dietary fiber.

6. Anti-Allergenic Substance: Acai berries contain anti-inflammatory properties that may prevent the typical inflammation response associated with allergic reactions.

7. Improved Cellular Health: On a general level, the anthocyanins found in acai play a role in our cellular protection system, helping to keep cells strong against the invasion of free radicals.

8. May Help Prevent Cancer: Acai is very high in Vitamin C and ellagic acid, an immune-system-boosting combination that has been shown to suppress the growth of cancer. One study published in the Journal of Agriculture and Food Chemistry found that polyphenolic compounds extracted from acai could reduce cancer cell proliferation by 56-86%. It is thought that acai’s phytochemcials can stop the process of carcinogenesis on a molecular level, killing off tumorous cells before they multiply. Acai is particularly indicated for the prevention of prostate enlargement.

Red White and Blue Acai Bowl

 

You’ll need:

  • 1 packet of frozen Sambazon Acai Pack – order online or find it in the frozen fruit section at your local health food store.
  • 1 banana
  • 1/2 cup of frozen fruit – I used a blend of mango and blueberries
  • 1/2 cup 100% pure apple juice – I like to stay sugar free so used 1/2 cup water + 1 dropperful of Liquid stevia instead
  • Granola – I used Nature’s Path Organic Hemp Granola
  • blueberries, red raspberries, bananas, and coconut shavings as garnish

Blend the frozen acai pack, banana, and apple juice in a high speed blender until smooth. (I always use my VitaMix and I LOVE it. I highly, highly recommend saving up for one, you will be so happy you did!!) Add more apple juice as needed but remember you want it to be really thick like ice cream, not soupy!

Pour blended mixture into a bowl and top with granola. Then top with fruit in the shape of the American Flag in honor of the 4th of July! Finally add some coconut shavings and serve nice and cold!
