Healthy Recipes for Kids

School is back in session and I’ve been getting several questions on healthy snacks for kids. Getting your kids to eat healthier can actually be a lot easier than you think!! I’ve found the two of the most important factors to be:

  1. Making it accessible. Be sure to prep healthy foods ahead of time. Most kids will pass on an apple in the fridge. However, hand them a plate with sliced apples and a big dollop of almond butter and they’ll dig in! It seems like such a small thing but it makes a huge difference! Make sure your healthy foods are ready to eat!!
  2. Make it fun! When food is colorful and interesting, everyone is going to be more interested in trying it. Use color and creativity to spruce up your snacks.

These apple cookies are beyond adorable and would be great for kids and adults! Have your kids help you with the assembly and picking out toppings, they’ll have a blast doing it!

These teddy bear toasts are anything but boring and are sure to be a hit with everyone! Simply toast some Ezekiel bread, spread with almond butter, and top with sliced bananas and raisins/blueberries/chocolate chips!

Presentation is everything! These butterfly snacks make ordinary snacks exciting! I would leave out the goldfish (too many toxic dyes and preservatives) and choose a healthier cracker or trail mix instead!

Watermelon Pizza?! Such a fun treat!!

These rainbow veggie skewers are a great way to get your kids excited about eating more veggies! Have them help you place the veggies on the skewers too! Kids love to help and are much more likely to feel comfortable with foods when they are familiar with them and feel like they have created something special!

These egg muffins are so easy to make and would be a great breakfast-on-the-go option for the whole family!

As many of you know, one of my favorite treats in the summertime is a nice, cold acai bowl. I love acai because it’s t’s a great way to sneak in a ton of immune boosting minerals and anti-oxidants into your diet. You can have acai bowls for breakfast, lunch or snacks. They are great anytime!

In honor of the 4th of July tomorrow I decided to make this patriotic acai bowl and host a giveaway!! The giveaway details are at the end of this post 🙂

Some of the amazing health benefits of Acai are:

1. Aids in Weight Loss: Known by nutritionists as a super-food, acai may help us not only lose weight, but maintain a healthy weight. One interesting study from the National Institutes of Aging found that pulp from the acai berry had the ability to reduce the negative effects of a high-fat diet in laboratory studies on flies.

2. Antiviral, Antibacterial & Anti-Parasitic Agent: Scientists from the Federal University of Rio de Janeiro have shown that consuming acai extract can help fight both viral and parasitic infections.

3. Heart Health: Similar to red wine, research shows that acai berries are extremely high in anthocyanins, a form of plant antioxidant associated with the ability to lower cholesterol levels in the blood stream. They are also rich in plant sterols that provide cardio-protective benefits to our cells. It does this by preventing blood clots, improving overall blood circulation, and relaxing the blood vessels.

4. Promotes Skin Health: Currently, many modern beauty products are carrying acai oil, again due to the oil’s high antioxidant content. What is more, acai oil is a great natural alternative to chemical based skin-care products that harm the skin in the long-run. Taken internally, the berries can also give your skin a healthier glow. In fact, Brazilians have been eating acai berries for centuries to treat skin conditions.

5. Helps with Digestive Upset: Taking acai may also aid in keeping our digestive system clean and in optimal function. The berries have powerful detoxification capacities in the human body and is a well-known traditional source of dietary fiber.

6. Anti-Allergenic Substance: Acai berries contain anti-inflammatory properties that may prevent the typical inflammation response associated with allergic reactions.

7. Improved Cellular Health: On a general level, the anthocyanins found in acai play a role in our cellular protection system, helping to keep cells strong against the invasion of free radicals.

8. May Help Prevent Cancer: Acai is very high in Vitamin C and ellagic acid, an immune-system-boosting combination that has been shown to suppress the growth of cancer. One study published in the Journal of Agriculture and Food Chemistry found that polyphenolic compounds extracted from acai could reduce cancer cell proliferation by 56-86%. It is thought that acai’s phytochemcials can stop the process of carcinogenesis on a molecular level, killing off tumorous cells before they multiply. Acai is particularly indicated for the prevention of prostate enlargement.

9. Anti-Aging Effects: Extremely high in many forms of plant phytochemicals (antioxidants), acai berries may contribute to an ability to slow or reverse typical processes of ageing related to inflammation and cellular oxidative damage. In fact, the berries are one of the planets highest sources of antioxidants, with one berry holding ten times the amount of antioxidants as grapes, and two times the amount of blueberries.

10. Boost in Energy: Due its overall health benefits, taking acai extract can lead to an increased overall level of energy and stamina, and may aid to combat fatigue and exhaustion.

11. Better Sex: This famous red berry has also been linked to overall increased blood circulation in the human body, a phenomenon that may contribute to a boost in sex drive, especially for men.

12. Improves Mental Function: Preliminary research studies show that acai may prevent mental imbalance in menopausal women. – source

You’ll need:

  • 1 packet of frozen Sambazon Acai Pack – order online or find it in the frozen fruit section at your local health food store.
  • 1 banana
  • 1/2 cup of frozen fruit – I used a blend of mango and blueberries
  • 1/2 cup 100% pure apple juice – I like to stay sugar free so used 1/2 cup water + 1 dropperful of Liquid stevia instead
  • Granola – I used Nature’s Path Organic Hemp Granola
  • blueberries, red raspberries, bananas, and coconut shavings as garnish

Blend the frozen acai pack, banana, and apple juice in a high speed blender until smooth. (I always use my VitaMix and I LOVE it. I highly, highly recommend saving up for one, you will be so happy you did!!) Add more apple juice as needed but remember you want it to be really thick like ice cream, not soupy!

Pour blended mixture into a bowl and top with granola. Then top with fruit in the shape of the American Flag in honor of the 4th of July! Finally add some coconut shavings and serve nice and cold!

Chocolate Peanut Butter Weight Loss Smoothie Recipe

By now you guys all know how much I LOVE my superfood smoothies!! They are nutritious, great for weight loss, super tasty, fast & easy to make, and absolutely DELICIOUS!!

Adding superfoods to your smoothies is a great way to get a BOOST in nutrition. I just went to California for a girls weekend where we indulged in lots of not-so-healthy foods and a ridiculous amount of cocktails…hey, it happens! Plus it was a blast so it’s totally worth it!! I don’t stress about falling off the wagon and not being perfect. Instead when I get back home, I just get right back on track and load up on greens and superfood smoothies! Today’s smoothie reminds me of Reese’s Peanut Butter Cups which makes getting back on track so much easier! It has extra nutrition from superfoods like Cacao PowderCocoCepsChia Seeds, and Probiotics. Just take a look at all the amazing health benefits of each of these ingredients, it’s kind of unbelievable!

Cacao Powder contains many important vitamins and minerals including:

  • Magnesium, and other essential minerals including calcium, sulfur, zinc, iron, copper, potassium, and manganese
  • Polyphenols called flavonoids, with antioxidant properties

Chia Seeds are one of my favorite superfoods! Just look at all these health benefits:

  • Omega-3 Fatty Acids – Chia seeds are rich in polyunsaturated fats, especially omega-3 fatty acids. Chia seeds’ lipid profile is composed of 60 percent omega-3s, making them one of the richest plant-based sources of these fatty acids — specifically, of alpha-linolenic acid, or ALA. The omega-3s in chia seeds can help reduce inflammation, enhance cognitive performance and reduce high cholesterol.
  • Fiber – Fiber is associated with reducing inflammation, lowering cholesterol and regulating bowel function. Chia seeds are an excellent source of fiber, with a whopping 10 grams in only 2 tablespoons. That is one-third of the daily recommended intake of fiber per day.
  • Antioxidants – Chia seeds are rich in antioxidants that help protect the body from free radicals, aging and cancer. The high antioxidant profile also helps them have a long shelf life. They last almost two years without refrigeration.
  • Minerals – Two tablespoons of chia seeds contain 18 percent of the DRI for calcium, 35 percent for phosphorus, 24 percent for magnesium and about 50 percent for manganese. These nutrients help you prevent hypertension and maintain a healthy weight, and are important for energy metabolism and a part of DNA synthesis.
  • Satiety – Satiety is the feeling of being full and satisfied, which helps lower food cravings between meals. The combination of protein, fiber and the gelling action of chia seeds when mixed with liquids all contribute to their satiating effects.
  • Gluten-Free – Chia seeds contain no gluten or grains. Therefore, all of the nutritional benefits of chia seeds can be obtained on a gluten-free diet.
  • Easily absorbed – unlike flaxseeds, which are also high in omega-3 fatty acids, fiber and minerals, chia seeds do not need to be ground in order to obtain their nutrient benefits.
  • Cholesterol – A study published in the “British Journal of Nutrition” showed that chia seeds as a dietary fat source can lower triglycerides and cholesterol levels while increasing HDL or “good” cholesterol. The study also found that when substituting chia seeds for other fat sources, such as corn oil, the ALA was able to prevent high triglyceride levels and reduce central obesity.
  • Blood Sugar Regulation – Chia seeds can play an important role in regulating insulin levels. They can reduce insulin resistance and decrease abnormally high levels of insulin in the blood. (source)

Chocolate Peanut Butter Superfood Smoothie

Here is my most recent creation which literally tastes like a Reese’s Peanut Butter Cup plus it’s loaded with unbelievable health benefits!! I hope you enjoy it as much as I did!

You’ll need:

Simply blend all ingredients in a high speed blender until smooth. Add more almond milk if needed. The CocoCepsChia Seeds, and Probiotics  are all optional but have amazing health benefits so if you have them or want to try them, I highly recommend adding them!

Time Saver: When I go to the grocery store I always buy 3-4 bunches of bananas at a time. As they start to get spotty and brown I peel them FIRST, then put them in a plastic bag and into the freezer. Green Smoothie For Weight Loss

Back to school and back on track – Summer is winding down and a common theme with my clients is the feeling that they (and their families) need to “get back on track” after vacations and summer indulgences. My go-to recommendation is always the Green Smoothie, it’s kind of magical! Adults and kids both love it because it tastes AMAZING! Plus it’s filling enough to have as a light meal or snack. I once heard someone say, “if you don’t have time to eat, then you need to drink your meals“! Busy moms, athletes, kids, young professionals, and everyone in between can benefit from the GS!

What I love most about the GS is that it tastes so good, you forget it is loaded with nutrition. Just look at that bright green color! It might look strange at first but it is sweet and filling – even the kids love it!! You can call it the “Monster Smoothie”, “Hulk Shake”, “Shrek Smoothie” or some other fun name but believe me, kids go crazy for it! And it’s a great way to sneak in some powerful green nutrition into their diet. Especially with the school year starting, it’s SO IMPORTANT for our kiddos to get proper nutrition. Studies have shown over and over again that kids with better nutrition are better behaved and do better academically in school!

The Green Smoothie is super fast to make, it takes less than 5 minutes to make, blend, and clean up so no excuses, even if you’re running late!!

Pineapple Mango Mint

This recipe is super simple. All you need is a blender and the following ingredients:

  • 1 banana
  • 1/2 cup frozen pineapple
  • 1/2 cup frozen mango
  • a couple handfuls of spinach
  • 1 sprig of fresh mint (optional but makes a lovely variation)
  • water

Add just enough water to blend and enjoy, that’s it! Forget the dehydrating morning latte and get the glow with a Green Smoothie instead.

I’ve have clients who have literally changed their lives just by adding Green Smoothies into their routine. Great for weight loss, digestive health, supporting the immune system, and as a healthy and filling snack. After a couple of weeks you’ll have that ‘Glow’ – glowing skin, hair, nails, even eyes get brighter! Who doesn’t want that?!

Try any combo you like, all you need is a base of bananas, fruit of your choice and a couple handfuls of your favorite green (I like spinach as it has a really mild flavor that blends well). The basic recipe is fruit + greens + water.

Green Smoothie Tips & Tricks:

  • People always ask me what kind of blender I use and recommend. I make all my smoothies using a VitaMix which is a super awesome, state of the art, amazing, must have high speed blender. They are the ONLY blender that will get you the creamy consistency that you desire.  I love, love, LOVE my VitaMix and highly recommend investing in one if you are ready to make serious changes to your diet. I have had mine for almost 5 years and use it daily! If you’re not ready to drop that kind of cash, Hamilton Beach makes some great budget friendly blenders that you can get at your local Walmart or Target.
  • If you can not do bananas for any reason simply leave it out or substitute any other fruit you like. If you want a creamier consistency, you can substitute avocado or coconut meat instead of the banana.
  • If you cannot have the fruits listed, simply use any fruits that you CAN have. Same goes for the spinach. If you can’t use spinach, you can substitute any green leafy vegetable of your choice; swiss chard, kale, romaine, arugula, etc. The basic recipe is fruit + greens + water.
  • If you want the smoothie to be BRIGHT green as pictured, use only lighter colored fruits like pineapple, mango, peaches, green grapes, kiwi, green apples, yellow raspberries, pear, oranges, etc. If you add darker fruits like strawberries, cherries, red grapes, blueberries etc your smoothie will turn out to be more of a brown color – still DELICIOUS, just not as vibrantly green as in the pictures above.
  • Can I add yogurt or milk to my green smoothie? I am a firm believer in proper food combining. Dairy does not combine well with fruit and will cause fermentation, yeast, digestive issues, and will not aid in weight loss. That’s the reason I don’t recommend adding yogurt or any other dairy products (the only exception to this rule is kefir). Believe me, you will be satisfied with the smoothies, the recipe will make about a quart which will definitely fill you up!!
  • If you have blood sugar issues, use avocado and/or coconut meat/flakes and semi-sweet fruits like grapefruit, berries, green apples, and add stevia to taste. I strongly recommend purchasing through iherb.com. I absolutely LOVE, LOVE, LOVE iherb!!   • If you are constantly rushing out the door in the morning, you can make your smoothies the night before. They will last in the fridge for up to 2 days.
  • If you are REALLY pressed for time, you can make all your green smoothies for the week then freeze them. Each night remove one and let thaw on the counter or in the fridge so that the next morning it’s ready to go.
  • This recipe will make approximately 32 ounces. You can have as little or as much as you need to feel full!
  • A lot of people ask how many calories are in the Green Smoothie. I don’t EVER worry about calories! When you’re eating whole foods, especially raw unprocessed fruits and vegetables, you don’t have to!! That’s what is SO LIBERATING about it!! If you must know, you can use an online calculator like fitday.com but know that those details don’t matter when you’re eating whole foods! I am kind of obsessed with Acai bowls lately! They are super yummy and loaded with nutrition. Kids love them and it’s a great way to sneak in a ton of immune boosting minerals and anti-oxidants into their diet without them knowing!! Acai Bowls for weight loss via Linda Wagner

You’ll need:

  • 1 packet of frozen Sambazon Acai Pack – order online or find it in the frozen fruit section at your local health food store.
  • 1 banana OR 1/2 cup of frozen fruit like mango or strawberries
  • 1/2 cup 100% pure apple juice – if you are trying to stay sugar free, use water + 1 dropperful of Liquid stevia instead
  • Granola – I used Nature’s Path Organic Hemp Granola
  • Goji Berries and a drizzle of fresh, local honey as garnish

Blend the frozen acai pack, banana, and apple juice in a high speed blender until smooth. (I always use my VitaMix and I LOVE it. I highly, highly recommend saving up for one, you will be so happy you did!!) Add more apple juice as needed but remember you want it to be really thick like ice cream, not soupy!

Pour blended mixture into a bowl and top with granola, sliced fruit of choice (strawberries, banana, raspberries, peaches, and blueberries are all lovely), goji berries or cacoa nibs and a drizzle of fresh local honey.

Acai Superfood Bowl Recipe + Health Benefits of Acai!

After recently discovering Blenders and Bowls here in Austin I have become obsessed with Acai bowls. They are delicious, super nutritious, and keep you full for hours! I recently decided to make my own superfood version since I have been travelling quite a bit lately and could use a little boost! This acai bowl is great for breakfast, as a snack, or as a light meal.

Acai Superfood Bowl Recipe

You’ll need:

Blend the frozen acai pack, fruit, apple juice, acai powder, spirulina, maca, and colostrum in a high speed blender until smooth. I always use a VitaMix and I LOVE it. I highly, highly recommend saving up for one, you will be so happy you did!! Add more apple juice as needed but remember you want it to be really thick like ice cream, not soupy!

One thing to remember about superfoods: you don’t have to use them. You can make a basic acai bowl with just the frozen packet, fruit, and juice and top it with sliced fruit and granola.

I added superfoods because I wanted this bad boy to be PACKED with extra minerals and nutrition. I’ve been travelling a lot lately and not always making the best food choices. That’s lead me into a cycle of cravings during the day that I don’t normally have. Cravings are really our body’s cry for more nutrition. I knew that the more mineral dense foods I had, the faster those cravings would go away. Hence the over the top amount of superfoods I added!

I know that superfoods can be overwhelming for some people. Have no fear, simply pick one to start and add them in slowly over time. Acai is a great one to start with.
