Best Vegan Sandwich Recipe

This sandwich is delicious and SO EASY to make!! #vegan #vegetarian #dairyfree

One of the most common obstacles that my clients and readers face is TIME. There’s just simply not enough of it!! Life is crazy, schedules change, we’ve got company, our kids need us…there’s always something that comes up! Even when we have the best intentions, sometimes there’s just no time for cooking! I fall into the same cycles and when I do, this is one of my favorite go-to meals. It’s fast, super easy, and most importantly, DELICIOUS!! The best part?! There’s absolutely NO COOKING involved!!

You’ll need:

  • 2 slices toasted Ezekiel Bread or sprouted bread
  • hummus – I used roasted red pepper hummus
  • 1/2 a large avocado
  • sun dried tomatoes - I get mine at the olive bar at our local health food store, Whole Foods or Central Market
  • Raw Saurkraut – I like Bubbies brand. You can find it in the refrigerated pickle section at the grocery store.
  • arugula
  • fresh cracked pepper

Let me first start off by saying that this is the way I’ve been enjoying (and devouring!) these sandwiches lately. The recipe is 100% open to interpretation, modification, and substitution. This combo, as unusual as it may seem is actually quite delicious! Feel free to use different greens, veggies, flavors of hummus, marinated veggies, etc.

First, toast your Ezekiel Bread.

Spread each piece of toast with 1/4 of avocado. Then, on top of the avocado, add a smear of your favorite hummus. The next layer will be your marinated veggies. I used sun dried tomatoes and raw sauerkraut (you can read about the health benefits of raw sauerkraut here).  Sprinkle with some fresh cracked pepper and finally, top with spicy greens like arugula.

You can eat this as an open faced sandwich or bring the two slices together and enjoy as a traditional sandwich.  Either way, it is delicious! No cooking involved. All you have to do is have the ingredients stocked in your fridge each week and you can always slap something together, even if you are absolutely exhausted!!  Preparation is key and as long as you’ve got something on hand, this is as easy as it gets!!

    Are the sun-dried tomatoes packed in olive oil, vinegar, water, what? I don’t have close access to whole foods, but can get them dried in bags or jars. Thanks, looks delish!

    Mmm, this sounds amazing! I make a similar sandwich with organic tomato paste and garlic powder. The roasted red pepper hummus sounds amazing but since I’m sensitive to beans I think I’ll try slices of roasted red bell peppers! :) Also, I’m not able to purchase your smoothie detox ebook right now but it’s inspired me to try a 7 day smoothie detox. I always use unsweetened almond milk but I like the idea of using water to cut down on calories since I’ll be enjoying two a day. Thanks for your work, Linda! I hope I (literally) GLOW like you one day! :)

    I LOVE avocado toast and have been eating it almost everyday with a little crumbled goat cheese. I use half an avocado but I have a hard time keeping the other half fresh for the next day (or day after that). How do you keep your avocado from going brown and slimy?

      Keep the seed in and then seal it in a ziplock back and it will stay green!

    I totally agree that there is never enough time…I wish there were more hours in a day! Also, sandwiches are a great go-to meal for a tight schedule. I love avocado, and sun dried tomatoes!
