This Vegetarian Taco Salad from Yummy Mummy is to LIVE for!! OM GOSH, so good and so gorgeous!! I would omit the tempeh from the recipe as I’m not a fan tempeh or any processed “meat” products. It will still be delicious and filling without it!!

This Winter Kale Salad is oh so simple and delicious. It’s beautiful color makes it the perfect start any holiday meal. Again, I would leave out the tempeh and maybe add some roasted butternut squash or sweet potato instead!

    I would just like to point out that tempeh is not a highly processed meat substitute… it is not a meat substitute at all, it is a great source of protein that isn’t mimicking anything, the process that is made by is similar to tofu. http://en.wikipedia.org/wiki/Tempeh

    Don’t discount tempeh! It is an awesome food to add to your diet!

    Hi Linda, these look great and I will definitely be making them soon. Just a note on tempeh, though, it is not really a processed “Meat” product. It is a traditional soy product originally from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. I know not everyone eats soy, but for people who do, tempeh is a health, and minimally processed protein source. The ingredient list on the tempeh currently in my refrigerator includes: cultured organic soybeans, water, organic brown rice, organic barley, and organic millet. No sodium, preservatives, or other chemicals that are typically in processed fake meat products such as tofu hot dogs. Tempeh is delicious and nutritious, in my humble opinion 🙂

    Just a quick friendly comment 🙂 Tempeh is not a “processed fake meat”. It is fermented soy and can be created into patties using different grains. It has been eaten in Indonesia and Japan for hundreds of years and if purchased organic and non-gmo, it is very healthy and not highly processed at all. It is nothing like a Boca burger or veggie dog, for example 🙂

      second that. I was going to comment as well. I discovered tempeh living in Indonesia years and years ago and it’s definitely not creepy like fake bbq ribs or anything. You should try it!

    Just wanted to note tempeh is not a processed fake meat- it is fermented soy and is not attempting to be or mock a meat. I understand your concerns about processed mock meat, but tempeh would not fall in that category.

    Garlic Exspressions is my favorite dressing however in the interest of dressing my salad with as little WW points as possible, I mix 1tbsp of GE with a few tbsp of the Walden Farms ranch dressing that has zero calories, zero carbs etc. It’s pretty good thanks to the GE!

    These recipes are divine. I wish I could have a taste of it. I have a very sensitive diet as of now though. I’ve gone through gastric surgery and I have learned that I am not to eat raw foods for the next few years.
