Roasted Veggies with Cauliflower Mashed Potatoes
I’m not a vegetarian but I do LOVE my veggies. If you’re looking to lose weight and feel great, implementing more vegetarian meals will help you get there faster. When I say vegetarian I don’t mean carbs, I mean VEGETABLES!! There are a LOT of unhealthy vegetarians who overeat carbs, dairy, soy, and processed food. Like Michael Pollen said, “Eat food. These nutritional differences may explain some of the health advantages of those following a varied, balanced vegetarian diet.” (source)
Like I said, I love my veggies! Veggies get a bad wrap, usually because people don’t know how to prepare them. It’s actually very easy. Try this meal as an intro into how delicious and satisfying vegetarian meals can be!
For the roasted veggies you’ll need:
- 1 bunch asparagus, cut off 1.5 inches off the root end – this part is usually very tough
- 1 pint cherry tomatoes, halved
- olive oil
- spices: I used garlic powder*, All Purpose seasoning*, fresh thyme, sea salt & fresh cracked pepper
Preheat your oven to 350 degrees.
Place your cut vegetables in a plastic bag and drizzle with just enough olive oil to lightly coat. Then spread the vegetables evenly on a large baking sheet lined with foil and/or parchment paper.
Next sprinkle the dried herbs, garlic powder, sea salt and pepper generously over your vegetables. Place on top rack in oven and bake for about 20 minutes or until just slightly browned.
Serve your veggies with my easy and SUPER delicious cauliflower mashed potatoes and garnish the whole dish with fresh thyme.
This meal is surprisingly filling, really delicious, and very healthy! If you are cooking for a meat loving family, this dish is also excellent served with grilled chickenfish.
