Italian Style Baked Eggs

I love me some eggs! They are tasty, easy to make, and easy to digest. There are so many health benefits from farm fresh eggs, why wouldn’t you want to incorporate them into your lifestyle?

You probably know by now that I love to have eggs at any meal, not just breakfast. I’m a very busy girl and sometimes I just don’t have the time to prepare a proper lunch or dinner. That’s where eggs come in. They are SO easy to make and there are so many delicious ways you can prepare them! College kids and starving artists take note, they are very inexpensive too!!

I always strive to buy local, pasture raised eggs as tests have found that eggs from hens raised on free pasture (as compared to the official USDA data for factory-farm eggs) contain:

  • 1/3 less cholesterol
  • 1/4 less saturated fat
  • 2/3 more vitamin A
  • Two times more omega-3 fatty acids
  • Three times more vitamin E
  • Seven times more beta carotene

So here is a fabulously delicious recipe using organic, free-range local eggs that is extremely delicious, nutritious and excellent for weight loss!

You’ll need:

Place a small, non-stick saucepan on your stove top over med-high heat. Add 1/2 cup marinara and crack 4 eggs – one in each corner -over the sauce. Cover with lid and let cook for about 5-7mins or until eggs are slightly firm.

At this time, preheat your oven and set to “Broil” at 500 degrees.

Once the eggs are starting to set, remove pan from heat. Remove lid and add a few dollops of chevre style goat cheese or a small handful of shredded goat cheddar to the top of your eggs and place the pan under the broiler and cook until just slightly brown. About 1-2 mins.

Top with fresh shredded basil or oregano (If you’re using dried herbs add them before you place the pan into the broiler) and you’re done!

This is a super easy lunch or dinner meal that is delicious, easy to make, and excellent for weight loss!! It’s surprisingly hearty too so it will keep you nice and full with out feeling like you need a nap afterwards!

    Ok, everyone! Make this one! Don’t procrastinate and put it off – DO IT! You will be very happy you did! I made this for dinner and WOW!! Linda, Scott kept saying “My god, this is yummy!” – several times (good sign :)) I loved it too! The marinara sauce was a brilliant decision. I did add a handful of lightly steamed broccoli and some tomato slices left over from salad on it – just splendid. We had a nice large salad prior to this meal and it was so satisfying, filling and nourishing. Thank you! XO

    Oh dang this is good – no more than good – deeeeevine :)
    I had some left over roasted cheery tomatoes that I threw in and because I didnt have any goats cheese so I used some feta and mozzarella instead. It tastes like the yummyness of a pizza topping. I made some oven roasted sweet potato fries and a kale salad – all round a meal made in heaven :) Thank you soooo much Linda for this recipe :)

    I love eggs! This looks fabulous! Am definitely going to try it!
    Is there a recommended limit on the quantity of eggs one can eat per week and it still be healthy? Or does it not matter? Thanks!
