Happy Birthday America!

Happy 4th of July to all of my American readers!! Here’s a simple, healthy recipe that I know you’ll love!

You’ll need:

  • 1 point strawberries, sliced into cubes
  • 1 pint raspberries
  • 1 pint blueberries
  • 2 white flesh peaches, sliced into cubes
  • 1/2 a honeydew melon, sliced into cubes or balls using a melon baller
  • leaves from 3-4 sprigs of mint
  • 1 Tbs fresh lemon juice
  • Vanilla Stevia

Finely chop mint leaves and toss with 1 dropper full of Vanilla Stevia (more or less to taste), lemon juice and 1 Tbs water. Pour over fruit and toss until fruit is coated. Cover and let sit for about 30mins. Serve immediately or it can be refrigerated, covered for up to 1 day.
