My Meals Lately According to Instagram
I’m constantly posting food photos on Instagram (follow me @lovelindawagner) so I thought I’d share some of my recent recipes. These are all SUPER FAST and equally delicious!
This recipe is SO easy and SO SO SOOOOO good! Simply toast 2 slices of Ezekiel bread. Smear one side of each peice of toast with a store bought red pepper hummus. Top with arugula and oven roasted tomatoes.
For the tomatoes, I sliced medium size tomatoes into thick slices, drizzled with olive oil and sprinkled with herbs de Provence, garlic powder, sea salt and fresh cracked pepper. Place on a baking dish lined with parchment paper and bake at 425 degrees for 20-30mins. I always make big batches (5-8 whole tomatoes) so I have plenty to use on salads, veggies, and sandwiches for the rest of the week!

I typically make a big batch of veggies at the beginning of each week. This way I always have healthy options on hand. To make your own roasted veggies you can follow this recipe or this recipe. Lately, I’ve really been loving herbs de Provence, garlic powder, sea salt and pepper for my roasted veggies.
