Lemon Vinaigrette Recipe

My Favorite Vinaigrette Dressing + Superfood Giveaway Winner Announced!!!

This recipe is for Jill and Sarah – it is my very basic, go-to salad dressing. It’s adapted from the beautiful Mozza Cookbook. It is always a hit and oh so easy to make!

You’ll need:

  • 1/4 cup minced shallots or red onion
  • juice of 3 lemons
  • 1 – 2 Tbs White Wine vinegar
  • 1/2 – 1 cup olive oil
  • 1-2 dropperfuls of stevia or 1-2 tsps honey/maple syrup
  • 1 tsp dijon mustard (optional)
  • 1 tsp sea salt or more to taste
  • fresh ground black pepper to taste
  • 4 Tbs minced cilantro or herb(s) of choice – optional

Combine the shallots, lemon juice, vinegar and salt in a small bowl or mason jar. Set aside to marinate for 5-10 mins. This step is KEY! The marinated shallots are what make this dressing really POP! I love the marinated shallots so much that I typically double or even triple the amount of shallots listed.

Next add the rest of the ingredients and shake/wisk together thoroughly. Taste and adjust flavors as needed.

I always make my dressings in a mason jar. That way I can just screw on the lid and shake. It makes it so much easier, and no extra dishes to clean up!  The finished product will look something like this:

The fun thing about this dressing is that everything is just an approximation and can be modified. If you want a sweet dressing, add more stevia, honey or maple syrup. If you like it a little more tart add more lemon juice or white vinegar. If you’re in the mood for an Italian Style dressing use basil and oregano instead of cilantro. Subbing dill for the cilantro is another tasty variation.

Toss with your favorite mixed greens and enjoy!!

  1. I whipped up a dressing tonight that was very similar to this minus the shallots – it was very good! Will get the shallots so it will be GREAT! Love your salad tossing tongs! very cool! Have a good night.

  2. OK, I just made this with the shallots and WOW! what a fabulous dressing! I could see this beautifully drizzled over some fresh steamed cauliflower/broccoli or quinoa pasta? Many possibilities – so tasty and healthy. Love it!

  5. this is the absolute BEST salad dressing ever. i’ve been making it for the past month or so. i have used cilantro, rosemary, basil or ginger. all have been well-received. i took your advice and loaded up on the shallots and i agree that they are the best part. even my 3 year old son loves it. we are hooked (on everything you have posted). thanks for sharing…

  6. I made this dressing tonight for the first time. Didn’t have the shallots, but went for it with the red onion. My husband (not big on veggies) said it was the best salad he has ever had. My two year old son really liked it as well. (He asked for more salad!) I’m enjoying so many of your recipes this week! Have you ever tried this recipe substituting lime juice? I think it would be unbelievable with the cilantro version. Thank you!

    1. Awesome Sally!! So glad you and the whole family enjoyed it!! Lime juice would be a lovely addition, especially with cilantro! You could even add a little jalepeno if you like a little kick!

  7. I’ll have to try this as the marinated shallots sounds enticing. Have you seen those reCAP lids for Mason jars? Perfect for mixing up pourable stuff. (No connection to them. I actually won one in a blog giveaway and love it!)

  8. This is so yummy! Does this need to be refrigerated though? Whenever I put my jar of dressing in the fridge it gets hard and coagulated!
