Strawberry Lime Parfait and a Giveaway!!

Today is a very special day. Not only do I have an amazingly healthy, all raw, delicious dessert recipe for you, but I’ve also got a great GIVEAWAY for all of my fabulous readers!! Scroll down for complete details.
It’s still hot here in Austin, and by hot I mean 105 degrees. Yep that’s right, while most of you around the country are getting out your boots, jackets and making hot apple cider, we are still in the throws of a full blown Indian summer heat wave! After lounging by the pool this weekend I decided I needed something cool and refreshing and alas, this Strawberry Lime Parfait was born!

This recipe is all raw, vegan, loaded with vitamins & minerals and did you see it?! It’s gorgeous!! …I couldn’t decide which background I liked better, so here is the second series of pictures I shot. Which one do YOU like better? Do you prefer the clean white or earthy tones?

I will definitely be making this the next time we have friends over. It is so pretty and freezes well so can be made well in advance.

You’ll need:
- 1 large avocado
- juice of two limes
- 1 1/5 cup fresh or frozen strawberries (I used half fresh, half frozen)
- Vanilla Stevia
- 2 drops doTERRA Lime essential oil
- 1 tsp coconut powder (optional)
In a blender or food processor, blend the meat of the avocado with lime juice, coconut powder, 2 squeezes of Vanilla Stevia and Lime essential oil until smooth. Divide blended mixture into 2 small rocks glasses.
Next blend the strawberries and 2 more squeezes Vanilla Stevia until smooth. Note: If you would like a chunkier consistency, you can blend for a shorter time until desired consistency is reached. Place blended strawberry mixture over the avocado and garnish with lemon and lime. Yummm!

Lime essential oil can be used in cooking, skin care, aromatherapy and to support the immune system. I’ve been adding Lime drops to my smoothies, green juice, and desserts to give them a little ZING! I absolutely LOVE the fresh taste it brings to my dishes!
Rachel also informed me that citrus oils have been used for centuries to support the skin and help with wrinkles, yes please! I’ve been adding a drop to my face cream each night and I must say I’m loving it!
Lime is also great for supporting the immune system. Take just a few drops with food or water to support sore throats, sinus, and respiratory issues.
Other uses include:
- Veggie wash – just add a few drops when washing vegetables to remove waxy build up
- Mood – take a whiff when you’ve got the blues or low energy for an instant boost
- Joints – massage onto sore or aching joints

I will be making that recipe, that’s for sure! I looooooove avocados. And lime. I would also add it to water and tea.
I have a fabulous recipe for citrus bars, that would be a yummy addition! also infused in the air, sounds like it would smell fabulous too!!
I would love to add the lime essential oil to all the great juices ive been making! It would also go great in my cilantro lime salad dressing. By the way, I made the pistachio pesto and sundried tomato chicken the other night and it was amazing! Pesto with pistachios is pure genius. thank you.
I would love to add lime essential oil to my teas with a little bit of ginger. Maybe even in the occasional mojito for extra zing!
I’ve never imagined avocado paired with strawberry but this looks delicious. A friend of mine who was big into homeopathic remedies once told me that lime is good cure for indigestion; have you heard of this use?
I have a Bath & Bodyworks scent bug. The lime would be wonderful in that!
I like putting lemon in my water, I will also add a drop or two of lime.
Plain goat yogurt mixed with some shredded coconut, dark chocolate chips, a drop of stevia and a drop or two of LIME would make a fantastically yummy treat!! [sorry Linda, I know yogurt is not one of your favorite options

Yummy – I would definitely be trying the parfait! Makes my mouth water just to read the recipe.
I like 4-5 drops of essential oil with filtered water
in a diffuser for relaxing; lime would be perfect!
Well, I make home made soaps for my friends and family….I would definitely use this lime essential oil in them! They would be oh so refreshing for a morning shower!
I will use in my morning Yoga classes. At the end of class I often provide peppermint oil or lotion so that students go “fully awake” into the day. The lime will be a new fresh twist on this and they will love it!
I’ll start by using it to make that delicious looking parfait you created!!!! I’m brand new to this world of whole, natural foods (I started reading your blog last week) but I’ve already been to my local Farmer’s Market (first time), made a “green smoothie” (I can’t imagine my morning without it now), tried the cauliflower with marinara & goat cheese (LOVED it!), bought Ezekiel bread (LOVE it!), and cooked your “stewp” last night!!!!! In just 5 days of making these changes to my habits, I can actually feel my body thanking me. I can tell that it’s happy with what I’m putting in it now (hello, 3 lbs just kinda fell off), and it’s rewarding me with extra spring in my step. Thank you so, so, so, so much for all of the important information you share on this blog!!!!!!! I’m so excited to keep learning about a fresh, natural world of food without all of the extra crap that I didn’t even fully realize was what was making me feel like crap. Thank you again!!!!!
P.S. For the glass of parfait itself, I like the white background! It makes it pop. For the raw fruit though, I like the earthy background… it seems to go with the fact that they’re real fruits you’ve taken a picture of, not a studio shot of fake freshness, if that makes sense!
I would use it in place of lemon that I put in my hot tea. I would also use it in case of any congestion I occasionally get during the winter months…add it to some hot water and breathe!
I would add it to my baby oil and use it after I shower to keep my skin well moisturized and also lift my morning spirits!
I am going to go check out the other oils now, but for the lime I would use it to relax and lift my spirits! I am just getting into new fruit/veggie drinks so I am sure it would be useful there.
Also, I like the white background for the parfait. Can’t wait to try this recipe!

For the lime oil, I would put 2-3 drops in water to start the day before breakfast. Maybe even sip on water w/lime oil all day.
Lime oil sounds amazing! I would love to try it in water, tea and salad dressing. I would also add it to the shea butter whipped lotion I make for friends and family. Great contest!

This recipe looks delicious! I love anything lime. My favorite dessert has always been key lime pie.
I’ve never seen anything like the lime oil, but I would love to try it! I’ve always been interested in nutrition, and my upcoming wedding has inspired me to take a hard look at the things I’ve been putting into my body. I make your green smoothies a couple times a week and I love the way they make me feel. Learning is a life long process!
What an awesome product! I’ve never even heard of oil like this before. I would definitely try using it in my face cream at night! I would use them to make the recipes I am researching on your website. I am working on losing weight and improving my health. These essential oils would certainly help with that.
Lime is my very favorite flavor lately. I would definitely find a way to incorporate this into a cookie, perhaps with coconut oil and fresh coconut flakes. I would also add it to each and every smoothie I make. Something about lime makes me feel bright like the sun even if the weather here is turning gray!

I will use it along with Tangarine and Grapefruit in my homemade air freshner. Just blend the oils and drizzle over some baking soda in a small jar with either lace over the top (jewelled jelly jars, lace and ring) or if it is where it would be out of reach of inquiring fingers – I’ve just put it into little odds and ends tea cups or ramekins. Just toss it a bit to refesh the scent.
I would use the lime oil to create new “drinks” for myself, and to share. I have breast and bone cancer (but doing very well, thank you) and do not drink my beloved wine anymore! The lime oil will hopefully flavor my “drinks” and I can make your “mocktail” above for friends when I entertain, and they can add rum or whatever as they please. I also love to flavor my water, so this would be an easy use for me.
I would use the Lime essential oil for my green tea! I’m also a big salad eater and this will do well with a salad dressing. Love the taste of lime on my veggie tacos with jalapenos.

I like the idea of using it for massaging sore joints as I have a bad shoulder. Sounds relaxing. Also, the parfait looks pretty good!
