Recipes Using Leftovers

I recieved a lot of comments and posititve feedback on my last recipe for Quinoa & Greens. I’m so excited for all of you to try quinoa, it is such a healthy grain with tremendous health benefits!
Here is another way to use that same recipe but with a scrumptious little twist! Let me introduce the incredibly easy, delicious, and nutritious:
Quinoa Patty
These patties were just sooooo good I had to share!
and we’re going to end up with this:
Yumm!!!!
You’ll need:
- 3 cups leftover Quinoa & Greens mixture
- 3 organic eggs
- 1/2 cup goat feta
Simply beat the eggs and then stir in the goat feta and Quinoa & Greens. Mix well. Spoon the combined mixture into a non-stick or cast iron skillet over med-high heat and cook each side until golden brown. Each side will take roughly 3-4 minuets.
I used mine to top a simple salad made with romaine, red leaf lettuce and a simple vinaigrette.
That’s it! As with all of my meals, this dish is super simple, bursting with flavor, and incredibly satisfying.
I hope I’ve inspired you to get creative with your leftovers. It’s amazing how much you can transform a dish by adding only 2 ingredients!!

Great idea! The patties look super tasty!
Well we had this last night, I didn’t have Leeks so I used regular onions, and I didn’t have zucchini so I just left it out, it was good. I also put some spices in it, like chipotle powder and so curry powder to give it a kick. I made enough to have the patties for breakfast.

I think I will love this! Looks like egg fu yung, one of my favorite Chinese restaurant dishes! I’m guessing this is an end-of-the-day meal from a food combining perspective.

I made extra quinoa only to try this! And oh my god, it was soooo nice! I loved it!
I just added an egg as i didn’t have any kind of cheese but it was still really good!
