Healthy Hors d’oeuvres
Wednesday, March 23rd, 2011Easy Zucchini Wraps
These Zucchini Wraps are simple, delicious and great for entertaining!
You’ll need:
- 2 medium sized zucchini
- 2 cups fresh Basil
- 1/2 c pistachios
- 1 Tbs Olive oil
- 1tsp sea salt (or to taste)
- pinch of freshly ground black pepper
- sun dried tomatoes – either packed in olive oil or re-hydrated in water
Slice the zucchini into long strips using a mandolin or a vegetable peeler. Place on a drying rack and let sit for 20-30 mins to absorb excess moisture. You could even put them directly on an oven rack on low heat.
In a food processor, combine basil, pistachios, olive oil, salt & pepper until smooth.
Once zucchini strips are soft and of a dryer consistency, place a spoon full of pesto and a sundried tomato on one end of the zucchini strip. Simply roll and secure with a toothpick. Voila! Done!
Simple, healthy, and delicious!

For the pistachios, do you soak them or anything like that prior to using them? And do you get them unsalted and already “peeled?” (This looks amazing, by the way!)

I didn’t soak these in the interest of time. You can soak them if you like. I would use unsalted. It doesn’t matter whether they are already peeled, it; just come down to what is easiest for you

My office decided to have a office meeting/gluttony fest. With everyone else brings fats and meats and 4 other people (besides my pescatarian self) in our office on diabetic diets and ulcer diets finding something we can all eat and enjoy was becoming a nightmare! These are perfect! I’m not a big sun dried tomatoes fan but so I think I will try a spinach leaf instead but thank you so much for putting this out there.
