Sweets for My Sweet!

Happy Valentine’s Day sweet thing!! Here’s a fast, easy recipe to satisfy your sweet tooth and your desire for a rockin hot bod! Who knew the two could coexist?!

Vanilla Macaroons

You’ll need:

  • about half a pound of shredded coconut
  • 3 Tbs Coconut butter
  • stevia to taste
  • a dash of vanilla extract
  • 3-4Tbs water

Using your hands, simply mix all of the ingredients in a bowl and let sit for about 10-15 mins. This allows the coconut flakes to rehydrate and absorb the stevia & vanilla extract.

Then make a ball by squeezing about 1-2 Tbs of the mixture tightly in your hands.  This will squeeze a little of the water out and should allow the ball to hold it’s shape.  It may still be somewhat flaky but that’s ok.  Gently place on a baking sheet and cook @ 350 deg for 10-15mins.  Watch these closely, they cook fast!! They are ready when the tops start to develop a golden brown.

Hope you enjoy this easy, sugar free recipe! I like to have my macaroons with a couple pieces of dark chocolate, they go together really nicely :)
