Sweet Potato & Vegetable Stew
I don’t know about you but it’s freezing here!! There’s nothing better on a cold day than a nice, hearty stew! I love simple recipes and this one is super simple, hearty and delicious!!
You will need:
- 1 red onion
- 1 bunch celery
- 2 large sweet potatoes
- 6 medium sized red potatoes
- 5 carrot stalks
- 1/2 a cauliflower
- sea sat
These are just approximate. You can adjust the quantities and substitute/add in any veggies of your choice
First start out by making a simple veggie stock. I used 1 red onion and 4 stalks of celery roughly chopped in about 2 qts water and salted with sea salt. Boil on med-high heat for about 15mins or until veggies are soft.
Next chop 2 sweet potatoes into disks.
Add sweet potatoes to the veggie broth and boil for another 15-20mins or until sweet potatoes are soft. Remove from heat and use a hand held mixer like this one to blend.
Next add your favorite chopped veggies to the mix. I used red potatoes, cauliflower,
celery, and some beautiful red carrots from the farmers market. Just chop ‘em and add ‘em to the mix! Bring to a slow boil over med heat for another 15-20mins.
I topped mine with a dollop of soft chevre style goat cheese and a delicious mixed green salad. I always start my meals with a salad, eating light to heavy makes a world of difference (more on this to come)!
This is sooooo easy to make. The taste is amazing and LOOK at the ingredients; it’s just veggies, water, and sea salt! So simple! You could dress it up if you want but really there is no need, it’s so incredibly delicious as is! Trust me, you’ll be shocked. Low cal, low fat, yet super hearty and FULL of flavor. It doesn’t get much better than that!
